Omelet in a Bag

Use freezer strength bags, veggies work best but precooked ham, bacon works well too. My family loves these with cheese, onion and bell pepper. No added fat makes these nutritious omelets and very tasty, plus 11 year old can cook these in a hot pot, with easy clean up.

Fried Cabbage II

I used Vidalia onions, lots of them, used cubed ham with the half the bacon... and skipped the vinegar, and it was absolutely delicious.

Collard Greens

Just like my grandma used to make...if you are scared of the salt pork/extra fat, try smoked turkey leg...tastes just like ham..and the greens are still flavorful

Jeremy's Philly Steak and Cheese Sandwich

I can hear the GASP coming...but here goes....why does every steak sandwich need to be a "Philly" steak??? I did cut back on the cream cheese...added more garlic for taste. This sandwich was very good...I will fix it again for my family.

Baked Linguine with Meat Sauce

I prepared this recipe on my job as a special dish...every one now has that expectant look on their face when they see me with ground beef and cheese. It was very rich; next time I will use lower fat Neufchatel cheese and sour cream. This recipe is excellent for feeding large groups.
