Swiss Chicken Casserole II
Made this twice – loved it both times, but 1st time was the best. Seems like the use of the stuffing mix is the crux – the more you use the more it tastes like stuffing. I bought a herb & spice mix of parsley, sage, rosemary, thyme & marjoram. 1st was according to other hints, raw broccoli on base, chicken cut into squares (I actually sprinkled it with Nostimini – a herb flavouring mix – but I am not sure its necessary), grated matured cheese, soup mixed with water, then only about ½ cup stuffing mix, sprinkled on like breadcrumbs. In cooking the stuffing sort of sank into the soup leaving a more subtle flavour. A 5 star turn. The 2nd time it was the same but I used the two cups of stuffing mix. It created a definite topping. The casserole then tasted predominantly of stuffing and was drier. I think the stuffing absorbed some of the liquid. Possibly only 4 stars.

Made it and took note of recommended changes. However base recipe and the time taken detract from its appeal/rating

Avocado and Bacon Soup
I made this soup in advance for a family dinner party, leaving the cream to add at the last moment. It is a lovely soup but not a good one for entertaining - because you need to watch it like a hawk. I accidently let it boil and it made it very bitter. I thought the cream would be the reason not to let it boil - but in retrospect it was the avocado.
