Curried Vegetables

I didn't have cumin seeds so I used powder. I didn't use jalapeno peppers or tumeric b/c I didn't have any. I added water several times to keep it from burning. I added spinach just before it was finished. Next time I will add the eggplant later also b/c it disintegrated by the time the potatoes were cooked. It was very good. The cilantro was especially good on it.

Vegetable Curry

I didn't have tumeric or red pepper. I thought it was very good anyway. I added a little water twice to help cook the potatoes and cauliflower.

Very good. I used applesauce instead of oil and I added a 1/4 tsp of cinnamon. I might add a little bit more of each spice next time.

Janine's Best Banana Bread

I used wheat flour instead of white, half white sugar and half brown, and added a teaspoon of vanilla. The first time I made it, I baked for 40 min at 350 and 40 min at 300. I loved how crunchy the outside was, but the inside dried out a little after a day or two. The second time I made it, I made the same subs and additions as above, but also subbed applesauce for the butter. I baked a little more than an hour at 325. The outside wasn't crunchy, but the inside stayed moist after the frist day.

Hearty Banana Oat Flapjacks

These are great. I made them without the bananas b/c I didn't have any, and I used wheat flour instead of white. It made about 12 three-inch pancakes.

Eggplant Tomato Bake

I took other reviewers suggestions and added some seasoning. I used Morton Nature's Seasoning on the eggplant and the tomato. This is an easy recipe and it's quite tasty.

Chinese Eggplant Fries

With ranch, these were okay. They're bland otherwise. They were incredibly messy to make. Maybe a deep fryer would work better.

This is a light and delicious meal. The first time I made it, I doubled the spinach and still didn't think it was enough. The next time I used 5 times the spinach and liked that a lot better.

Oatmeal Whole Wheat Quick Bread

I love how fast and easy this bread is to make. I never grind the oatmeal and it turns out fine. The dough is too runny to form into a ball so I just scrape it onto the baking sheet with a rubber scraper. I tried it once in a bread pan, but the inside took too long to bake. I may try it again using another reviewer's suggestion to lower the temp to 350 and bake for 1 hour. The taste is always great.

Fresh Apple Spice Cake

I added an extra 1/2 tsp of the cinnamon, nutmeg, and cloves and I added a 1/2 tsp of allspice. I was afraid it would be too dry, but it turned out really good. It wasn't a moist cake, but it wasn't too dry either. The flavor is very good.
