About this Cook
I am happily married and actively working towards my Bachelor's Degree in English and editing.
My favorite things to cook
I love making Thai food and other Asian dishes.
My favorite family cooking traditions
Making "eggy pie" on Christmas Eve with my family. It's casserole with bread, eggs, little smokies, and cheese. All of our Christmas dishes are so fun to make with the family!
My cooking triumphs
I recently made some chicken satay kebabs that were such a hit with my family that everyone was begging for more!
My cooking tragedies
Once I made the perfect batch of snickerdoodles. I meant to send them to my sister who was studying abroad, but I ate them all! When I tried to re-create the batch to send to her, I made the worst cookies ever. Pockets of baking soda, flour, salt. They were even hard when they came out of the oven! It was a tragedy.

Pumpkin Chocolate Chip Cookies III
These cookies are bland, UNLESS you substitute applesauce for the oil as several others have said. If the original recipe called for applesauce and not oil, I would give these a 5.

Spinach and Potato Frittata
Mine looked nothing like the picture! I added extra garlic, salt, and pepper, but still found mine to be bland. Also, like comments have said, the egg didn't cook throughout before the bottom burned, so I would suggest starting this in an oven-safe skillet and transferring it to the oven to finish off the egg. My husband loved this, but I thought it was only OK. I put some fresh salsa on a couple bites and that really helped the flavor. My husband loved his with Tabasco sauce on it.

Chili Potato Burritos
I found this dish to be very heavy. If I wanted to eat mashed potatoes, I would rather do it without a tortilla wrapped around them. However, as plain mashed potatoes, they were delicious. I just don't think this makes for a very good burrito. It just made me feel gross after I ate it for dinner. My husband, however, loved them. Too bad for him, because I won't be making this again.
