Downeast Maine Pumpkin Bread

I left it in there for about 45 minutes and found it to be somewhat dry. I added chocolate chips and some walnuts, which made delicious additions.

Best Cream Of Broccoli Soup

I left the broccoli in the chicken broth boiling for about 25 minutes. There is no need to puree as the broccoli sort of melts/crumbles on its own after boiling for that long. If you like it a little chunkier, then I would let it boil for at least 15 min. I would not "puree" the broccoli. I thought it was a really good soup

Gourmet Mushroom Risotto

Delicious!!! Used pinot grigio, 1 package of portabello mushrooms (about 6 medium ones) and 1 package of white mushrooms (about 8 oz). My legs hurt from standing there stirring half a cup of broth until it all disolved, but my guests liked it.

Flan de Coco (Coconut Flan)

Left out the additional 1/2 cup of sugar as others did. I thought it was sweet enough without it. I took advise from others who have made flan and warmed up my dish in an oven while it was preheating so that the carmel wouldn't harden too quickly. Worked perfectly.

Costa Rican Coffee Panna Cotta with Bittersweet Chocolate-Rum Sauce

I made this recipe twice and I thought the 2nd time was so much better and less bitter. I made the espresso - did not use espresso instant powder and mixed in 1 tablespoon of the espresso in the mixture. In addition, I cut back on the rum b/c I thought it made the custard a little too bitter. I used 1/8c of dark rum. I increased the coconut milk. I used 1 1/8c of coconut milk. Finally, I used Giaradelli bittersweet chocolate chip cookies for the chocolate glaze. Delish!

Classic Tiramisu

The way the recipe is written, I would rate it 4 stars. I had to reduce the sugar and whipping cream somewhat b/c the mascarpone cheese came in 8 oz containers, so I used 1 cup sugar and 1 cup whipping cream. In my opinion, espresso should be incorporated into this recipe. I made 4 cups of espresso (using espresso cup measurements). In the espresso, I mixed 1 tablespoon of Ameretto liquor and a couple teaspoons of sugar (you could taste it to make sure it's not too bitter, but you still want to maintain a stronger coffee flavor). I poured the espresso mixture into a square pyrex-like baking dish. I dipped both sides of the ladyfinger (Balocca Savoiardi brand) cookies into the espresso mixture and lined them up in a Springform pan.

Tasty Tuna Burgers

These were awesome! I just threw eveything in my little food processor so that I wouldn't have to mix/chop anything. Stuck in the fridge for a half hour and made them into patties. They were delicious!

Lime Chicken Soft Tacos

I used the same ingredients listed in the recipe. Only change I made was I doubled the vinegar and lime juice to ensure there was enough flavor added to the chicken. In addition, I added a tablespoon of oil to the skillet when I cooked the chicken. I drained some of the liquid the chicken produced before adding the seasoning. It was a great recipe.

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

They were so yummy! I had to bake them 2x b/c I filled the cupcake holder too much and they puffed up way too much. But, if you follow the directions and only fill it up 1/3 of the way, you'll be fine :) I used chocolate mix the 2nd time and the cookie dough really stood out. I don't think frosting is necessary especially b/c it's kind of nice to see the cupcake w/ the cookie dough.

Lemon Panna Cotta With Raspberry-Orange Sauce

This was good. I followed the recipe 100%. It would probably be just as yummy with strawberry sauce or other homemade sauces. I made 6 servings from this recipe, but I felt that the sauce was enough for at least 6 additional servings. I think if you cut the sauce ingredients in half, then it would suffice for 6 or servings.

Marinated Grilled Shrimp

These were great. I followed the recipe's measurements exactly. I was planning on grilling them on the bbq until we got snow in March, so I ended up warming them up on a grill pan on the stove top. I bought the cooked shrimp, so I just warmed them up on the grill pan and drizzled the shrimps with the juices that let out on the pan. I also sprinkled a little hot pepper on them and paired them with mexican rice and a salad. Delicious!

Molten Chocolate Cakes With Sugar-Coated Raspberries

These came out good. I didn't have cupcake/muffin paper holders, so I just used a muffin pan without the holders. Not a fan of rasberries, so I utilized the recipe on this site "Supreme Strawberry Topping". If you use this topping recipe, you could customize it since you don't need so much topping on small muffins. I used about 10 strawberries, 1/8c sugar and 1 teaspoon vanilla. Chopped the strawberries and mixed in sugar & vanilla. Heat in pot until strawberries are soft and syrup forms.

Judy's Strawberry Pretzel Salad

I made this for the first time today for a dinner party I hosted. Unfortunately, the directions to use a 9x13 pan didn't work out too well. The pan was definitely not deep enough to hold the jello topping. I had to scoop it out of the pan and place in another dish in order for the entire jello mold to fit. So, point of the review is to make sure you have a deep enough dish for this! (It still tasted great, even though it didn't look as nice as I wanted it to)

Black Russian Cake I

This cake was delicious. I used the glaze mentioned in the reviews, but modified it so that there was more kaluah: 1/2 c kaluah, 1/4 c conf sugar and 1/4 c butter. I boiled it, drizzled half on the cake while it was still in the pan and the other half when the cake was out of the pan so that the top of the cake would be moist and tasty!

Curried Chicken Tea Sandwiches

I used Pillsbury Crescent rolls. I sliced them into thin pieces and pushed the center down, so when they baked they would be flat to better support the mixture. I then placed a spoonful of the mixture on top of the crescent slices after they were baked. I stuck a toothpick in the center of the slices to assist people in picking them up. I also used whole wheat bread squares that I found at the grocery store for appetizers.

Fluffy Pancakes

I had a guest over and ran out of my normal pancake mix. I had all the ingredients for this recipe and it turned out excellent! I never knew it was so easy to make homemade pancakes. I added chocolate chips - yummy! Next time I'll try it with wheat flour. Thanks for the recipe!
