Grilled Tilapia with Mango Salsa
This was fanFREAKINGtastic!!! It was a major hit. I was skeptical about the salsa because I usually don't eat things like that but boy was I wrong. The salsa was what set this dish off. I paired it with one of the black bean and corn salads then had watermelon for dessert. Great summer meal.

The Best Bean and Ham Soup
Best ham and bean soup I've ever had. I won't make it any differently then I did. I didn't have veg stock so I used chicken. All I had on hand but with the HUGE hambone I slowcooked for 6 hours with it before I removed it an added the carrots, onion, and celery it was awesome! I only cooked the veggies for about 2 hrs as we like them not so mushy. Excellent. Only the 3rd time I've ever tried ham and beans in my life and this one is the keeper. Oh! No tomatoes on hand so I added about 12 ounces of V8 spicy to the receipe.

Slow Cooker Beef Stew I
Fantastic base. I used a little less beef, loads of carrots, celery, potatoes, and onion. I really piled on the spices and added alot more garlic. Instead of black pepper I used cayenne, our fav. I also increased the flour to 3/4 cup because I wanted to make sure it was thicker. It was perfect. I thought I had beef broth and it was chix broth so I said to heck with it and used 2 cans of chix broth and a little water (bout a cup). This turned out perfect actually. The kind of recipe you can add or remove things easily and make it your own. We will have this again after the frozen leftovers run out. ;)
