Aunt Mary's Eggplant Balls
These were great! I did do a few things different (going by the suggestions of previous reviews). I did have to add extra water to steam the eggplant. I also used extra garlic and breadcrumbs, at least twice the amount, added an italian seasoning type mix and pureed everything in the food process. Will definitely use again!

Chickpea and Couscous Delight
Surprisingly good! This was my first time using couscous and this recipe fit my taste buds! I did change a few things - I used lemon juice instead of vinegar (as others suggested), diced canned tomatoes (with juice) and I added some tarragon to the dressing. Will definitely use this recipe again!
