Szechwan Shrimp

this is a keeper! I read reviews and did the following: I doubled the sauce recipe, used raw shrimp, and also added carrots, pea pods, and mushrooms to the mix. Hubby and I both loved it!

Herb-Stuffed Red Peppers

This earned 2 thumbs up at our house. I don't like green peppers but these were so much sweeter. I microwaved 3 peppers for 3 minutes and that seemed to be just the right amount after they were baked - slightly firm, not mushy. And the recipe did make plenty of filling for 3 large peppers. I did not use the allspice but threw in a handful of frozen corn to the mix. Used a Mexican mix shredded cheese for the melting at the end.

Country Apple Dumplings

Add me to the list of those who loved this recipe. I followed others advice to cut down on fat and sugar. I used lowfat crescents, 1/2 c. white sugar, 1/2 c. brown sugar, and only 1/2 cup better. I also cut apple into sixths. Terrific!

Hariton's 'Famous' Vegetarian Casserole

Great recipe. Can't beat it with all of the fresh stuff. I reduced it to one 9 x 12 pan and used asparagus instead of eggplant. Very adaptable.

Quinoa and Black Beans

My husband and I really liked this! I used about 1/2 of red pepper,2 small chicken breasts, chicken broth, and only 1 can of black beans. We topped it with shredded cheese. I think I'd like to try adding some chopped tomatoes next time. Quinoa is my new friend!

Raspberry Banana Bread

Very yummy bread! I used 2 tsp of baking powder instead of the soda, bumped up the flour to 2 c. and used 1/2 c. water and 1/3 c. oil. Love the combination of raspberries, bananas, and nuts.

Zesty Slow Cooker Chicken Barbecue

Have used this several times. Cook it, shred it and put it back in the juice for 30 minutes or so - and then we use it for sandwiches. A slice of cheese to top it off. Reheats well.

Easy and Delicious Chicken

A tasty crock pot recipe. I used a couple teaspoons of italian seasoning instead of the listed herbs. Also used only 4 oz of cream cheese and it was definitely rich enough. Added some seasoned salt but think I would leave it out next time as I always forget how salty the salad dressing and soup are. Added a can of mushrooms.

Mall Pretzels

This was a fun recipe to make as a family. I was able to mix in 1 cup of bread flour and 2 cups of all purpose flour with the mixer and then proceeded to kneading. Probably worked in 3/4 cup more the kneading. We had no problem rolling the pretzels, just let the dough rest for 3 or 4 minutes prior to beginnning to roll. I brought 6 cups of water and 6 T of baking soda to a boil and dipped the pretzels in for 15 seconds each. We did the butter and salt prior to baking for about 10 mintues. The pretzels were really light and yummy. I think I'd use even more butter next time. They were yummy!

Ga Ga Clusters

These just weren't what I thought they would be. I was trying to duplicate a chocolate cookie candy that I bought recently in a bake shop. The ones I tried had some crisp rice cereal in them as well so I cut down the nuts and marshmallows in this recipe and added 2 cups of cereal. However - the problem was the chocolate. It wasn't smooth and there wasn't enought to really cover the mixture. The peanuts didn't really want to get covered and stood out naked. I used about 1/4 milk chocolate chips and 3/4 cups semi-sweet. I dropped the clusters on waxed paper - worked ok. I was not satisfied.
