Greek Penne and Chicken
Awesome recipe! I add chopped sun-dried tomatoes and kalamata olives as well. I also double the amount of feta. I add the pasta to the sauce pan and cook it for a minute or two with the sauce so it can further absorb the flavors. My seven and two year olds even loved it!

Tomato-Cream Sauce for Pasta
Very good recipe. My family was getting sick of jarred sauce so I was looking for something easy that also tasted great. This is it!! I made and will make the following modifications, though: First off, my hubby and daughter do not like chunky sauces. After I added the diced tomatoes and let them cook down a bit, I put them in the blender to emulsify them a bit. It made a nice puree. I also used half-and-half and it turned out fine. I think blending the tomatoes helped to thicken the sauce too since others mentioned it was a little thin. I also only used about 1/3 of an onion and it was plenty. Next time, I'll do the same but will add lots more garlic, more fresh basil, a little more salt and maybe some sun-dried tomatoes to deepen the flavor. A great sauce that you can really tweak and make your own!

Italian Breaded Pork Chops
Made these the other night and they were really good! Don't usually make pork chops (except with Shake N'Bake)because they always come out too dry but these stayed moist. I decrease the eggs to 2 and the bread crumbs by about half and I still had some leftover. I even double-dipped and breaded them. I added some rosemary, Emeril seasoning and extra parm cheese to the breading and it was yummy. My 4 yr. old, who doesn't like pork, even ate them! Will definitely make them again!
