Nacho Potato Soup
5 stars for simplicity! Fast, simple and pretty good. My husband LOVES this soup. I tried the 1st time and didn't break up potatoes, so made for an awkward size in soup. So, now I break up the potatoes in the bag before adding them in. I also use Hot rotel for an added kick! Watch out this can make it extremely spicy...not for those who can't handle "hot" foods. It had me in tears the first time I tried it with the hot rotel, and I love spicy foods. Have also tried with cream corn and turned out pretty good.

Tilapia Ceviche
I cut the recipe down to only 2 fillets and still needed just about the same amount of limes, cucumber and tomato the recipe calls for. I also added Mango for additional flavor. After resting for only an hour and twenty minutes as called for, still tasted VERY raw. Tried tasting again the next day and was much better (about 24 hrs after making) so only 3 stars in my book.
