Corrigan's Minestrone

When I worked at Olive Garden, we cooked the pasta seperately. Then , add just before serving. Boil the pasta, drain and toss with veggie oil. Toss into soup right before serving. If you plan to store some for later, divide it before adding pasta or simply add a 1/4 cup or so of cooked pasta to each bowl before ladeling soup over it.

Homemade Crispy Seasoned French Fries

I have made this a couple of times in the deep fryer. For those that have bigger families, I suggest a bigger deep fryer or 2 of them if you fry on a regular basis. I did 2 batches in the fryer for my family of 5, including 2 guys that are big eaters. I have even tried this substituting steak seasoning because it has black pepper and garlic and other stuff in it. It is spicy and yummy with ketchup or ranch dressing. This batter works great with fish, chicken or butterflied shrimps.

Pork Chops to Live For

I agree with others that this is high in sodium. Easy solution is to make a basic rue (trans fat free margarine, skim milk, and flour or corn starch) adding fresh mushrooms and onions. My mom makes this very recipe with cheap cuts of blade or chuck beef steak in the oven. She calls it baked steak. It is a great base recipe that you add your own veggies(potatoes, carrots, celery) and spices/herbs (garlic, basil, parsley, oregano, red pepper flakes) to the pot.

Zucchini Summer Soup

I am not sure that I like the dill in it. I added a can of white beans for protein. Made a vegatarian meal with some toast and white wine.

Beef Cabbage Hash

A great quick dish. I even tried it once with a can of diced tomatoes. I was in the mood for it. It wasn't too Veggie soupish. The kids ate it. So it couldn't have been too bad. :)
