Creamy Dill Cucumber Toasties
Just Awesome! although if you leave them out for long, they DO get soggy. Maybe (as advised in other reviews) let guests spread the cream cheese mixture on the toaties themselves.

Curried Coconut Chicken
This was my first curry anything and it turned out fabulous! I experienced the common worries of making this recipe for the first time: the amount of curry seemed like a lot (it wasn't), there was a lot of liquid/sauce after I combined the milk and tomato sauce (simmering will reduce it), and I needed a bit more oil after cooking the curry for the sliced onion. I did drain the tomatoes a little and I used a can I already had of stewed tomatoes which had peppers and onions, etc., in it - I just picked out the tomatoes and added some of its juice to the curry sauce. My mother (whom is very scared of trying something new) said the sauce tasted great, but was a little on the sweet side (she doesn't usually eat sweet dishes or anything sweet for that matter). So, if there is someone in the family who does not eat sweets - you might want to cut back on some of the sugar and taste test before covering it to simmer. Oh, and the smell of curry will still linger in your house the next day!

Fantastic Mexican Dip
I made this for a party recently (and will for the next party coming up this month) and it was a super hit! As soon as it hit the table people crowded around it and stayed there until it was all gone! Anyway, I omitted the olives (mexican dip with onion & olives? - confusion) and the lettuce (afraid they would wilt). Only added 1lb of beef, 2lbs for the amount of salsa is just too much. Added some flavor to the ground beef with some seasoning before I added the salsa and let it simmer for quite some time until the meat was really tender. Consider doubling the recipe with 1lb of meat because it will be gone FAST!
