I'm a happy, upbeat person who loves to cook and try new things. I also love to crochet, read, go to museums and have fun times with my family, boyfriend and friends!
My favorite things to cook
I love baking, I used to bake up a storm during my teens but slowed down once I hit college. I've picked it up again, I also love to cook mexican, italian, asian and american dishes, I love experimenting with new things, I love mushrooms! I love learning new dishes and cuisines and am trying to expand my veggie cooking knowledge to get more into my diet.
My favorite family cooking traditions
My mother used to make Porcupines (hamburger and rice meatballs simmered in tomato sauce) that I loved as a kid! My grandmother makes this amazing wild rice stuffing for Christmas and Thanksgiving and a truly awsome Lemon Pie (no merrange!) My grandfather also love to experiment with cooking and so does my dad.
My cooking triumphs
I made a cheesecake which came out great on my first try! I created a now family favorite mushroom appatizer (for holidays and special meals) and have a "secret" ingredient for my beef stew that has friends, family and my boyfriend always begging me to make it!
My cooking tragedies
I've forgotten to switch the oven over from "preheat" to "bake" or accidentally switched it to "broil" a few times and ruined a few things!

Slow Cooker Lemon Garlic Chicken II
This was fantastic. I made a few modifications based on what I had and other reviewers recommendations. I used boneless, skinless chicken breasts (thats what I had on hand) and used 1 cup of chicken broth in place of the bouillon and water. I also upped the lemon juice to just shy half a cup (I wanted something really lemoney, it was 2 juiced lemons) and doubled the spices rubbed into the chicken. I will be making this quite often!

Creamy Garlic Mushroom Chicken
Though I made a few modifications my boyfriend and I really enjoyed this recipe. Since I was only cooking for 2 (and needed leftovers for 1 lunch the next day) I halved the recipe, cut the chicken breasts in large bite sized pieces and only used 1 can of cream of mushroom soup (didn't have garlic mushroom so I used plain mushroom) with half a can of milk to avoid the extra sauce noted in other reviews. In taste testing the soup/mayo/sour cream/parm mixture I found it kind of plain so I added a healthy shake of garlic powder, paprika and black pepper before combining the chicken and sauce in the pan. I baked it on the fly timewise so I'm not sure how that altered the cooktime (I just removed when bubbly and the breadcrumbs were golden brown). It was delicious! My BF absolutely loved it and had seconds. I served it over garlic mashed potatoes (we like garlic here:) with green beans and cornbread.

Cod with Italian Crumb Topping
Like some others I found the crust tasty but the fish really bland. I even tried the mayo/lemon juice mixture as well and followed the rest of the recipe to the T and it just fell flat for us. Perhaps using some herbs on the fish before crusting would help? Also I followed the other reviewers advice on soaking the fish in milk prior to baking and it did take away all of the "fishy" taste! Because of that I even got my stepson to eat some!
