Veggie Delight on Garlic Bread
This is a great recipe that can be used as an appetizer, a side dish, or a vegetarian meal all by itself! I made it as a side dish with grilled chicken, but had the leftovers as lunch the next day. Some modifications I made: brushing the bread w/ olive oil and toasting on the grill; cooking the veggies only until tender and warm, so that it was chunky when spooned onto the bread; and adding some yellow peppers and sliced onions to the saute mixture. It was a huge hit, especially with all of the great summer veggies.

Eggnog Cheesecake I
Although the holidays have passed, I'm still making this cheesecake. I made it twice during December -- once for a friend's holiday party, the other for Christmas dessert -- and both times it was a big hit! A family friend asked me to bring it to a get-together this weekend. It's a winner with or without the pecan caramel sauce!

Real Italian Calzones
This has to be one of the easiest calzone recipes I've ever tried, and it was delicious! I substituted spinach and mushrooms sauteed with garlic (be sure to drain it well!) for the pepperoni, etc. and, of course, used mozzarella cheese instead of cheddar, and it was a big hit with a bowl of chix. soup one night for dinner. I served the second one on Superbowl Sunday with a bunch of other appetizers and it was a big hit then, too! The dough is a real winner!
