Iced Pumpkin Cookies

Reviewed: Oct. 26, 2009
Delicious! I only used 1 cup of sugar and the cookies were sweet enough. I also added 1/4 cup of ground flax seeds. Yummy!

Quinoa and Black Beans

Delicious! One quick tip: I use Knorr cilantro cubes instead of fresh cilantro. I hate buying a whole bunch and using only a little bit for my recipes... it always ends up rotting in the fridge.

Roasted Green Beans with Almond Brittle

Reviewed: Oct. 21, 2009
Delicious! This was the first time that I roasted green beans... usually, I boil them... but from now on, I will always roast them. The almond brittle is a nice addition to the beans. My only problem is that I had a hard time trying to break it with my fingers. I guess I could have put it in a towel and smash it with a hammer, but I didn't want to ruin my countertops.

Creamy Mushroom Spaghetti Squash

Reviewed: Oct. 11, 2009
Nobody in my family liked it. The naturally sweet squash and the mushroom gravy just didn't work well together.

Squash Casserole I

Delicious! What a pleasant surprise (based on the limited amount of ingredients, I expected something a little boring).

Marinated Veggies

Reviewed: Sep. 30, 2009
Worked well on the mushrooms and onions but came out kind of bland on the squash. Somehow, the squash doesn't soak up the marinade as well as the other veggies.

Grilled Garlic Parmesan Zucchini

Reviewed: Sep. 28, 2009
Delicious! Followed another reviewer's suggestions: scooped a little bit out, filled the gap with the butter/garlic/parsley mixture, then cooked on the grill and added parmesan before serving. Will definitely make it again!

Blueberry Zucchini Bread

Reviewed: Aug. 7, 2009
Excellent! I followed reviewers' recommendations and used half white flour/half whole wheat flour as well as half brown sugar/half white sugar. I also made a crumb topping. In the future, I will use less sugar as the cake gets quite sweet with the topping. I made one large loaf and baked it for 45 min at 350 degrees in a convection oven.

Shrimp and Feta Cheese Pasta

Reviewed: Jul. 19, 2009
Great recipe. Used 1/2 cup of white wine as recommended by other reviewers. Also, I divided the amount of pasta by 2 in order to have a better pasta/sauce ratio. Will definitely make again.

Suki's Spinach and Feta Pasta

Reviewed: Jul. 19, 2009
Good dish but didn't have the "wow" factor. I added some grilled chicken tenders to make it a full meal. Would maybe consider adding a little bit of white wine to give it more flavor.

Quinoa Side Dish

Super easy, yet very good! It's very important to rinse the quinoa before using it. Otherwise, the dish will taste bitter.

Tasted good but the potatoes turned out to be very dry. My husband couldn't finish his. I probably won't make this recipe again.

Curried Quinoa Salad with Mango

I made the dish according to the recipe and found it a little boring. I had to add some chopped almonds and cranberries to make it a little more interesting.

Hawaiian Slaw

Reviewed: Jun. 30, 2009
Absolutely delicious! The best slaw I've ever had. I only used 1/2 cup of Marzetti Slaw Dressing for 4 cups of cabbage (instead of 3/4 cup) and I thought that this was enough.

Lemony Shrimp over Brown Rice

Good but not great. My husband and I thought that the rice/sauce ratio was a little off. The dish was a little bland b/c there wasn't enough sauce.

Feta and Roasted Red Pepper Dip

Reviewed: Apr. 30, 2009
Made the recipe as directed. Way too salty for me. I started eating the dip with nachos, but quickly realized I has to use something less salty like pita bread. Next time, I would use about half as much feta cheese.

Creamy Black Bean Dip

Reviewed: Apr. 27, 2009
I made the recipe exactly as described. I didn't like the taste very much. I ate in the dip with crackers and rolled up in a tortilla with cheese and sour cream. I had to use tons of sour cream to balance out the taste. Next time, I would probably try it with a little less ketchup and balsamic vinegar.

Flax and Sunflower Seed Bread

Reviewed: Apr. 26, 2009
Absolutely delicious! I like a good crust on my bread, so here's what I do: 1. I put my Dutch oven in the oven while I preheat it to 500 degrees. 2. When the oven is ready, I put the bread on a piece of parchment paper inside the Dutch oven and I put the lid back on. 3. I reduce the temperature to 450 degrees and bake the bread for 25 minutes. 4. Then, I remove the lid and bake it until it is golden brown (15 to 20 minutes).
