When I first saw this recipe I thought it was going to be hard to make and it would take a long time. It was actually pretty easy and Very very good. My family loved it.

Every year at Christmas time I try to find different cookie and treat recipes to make for my friends as gifts. I try to find easy recipes too, since I usually end up making 8 different things. This cookie recipe was very good and very easy. I will definitely make this one again.

Very good recipe, I made my own enchilada sauce to put in it. I did not use the 2 cups of water, I used 1 cup chicken broth and 1 cup of cream and depending on how much liquid you want you can either leave out the other can of chicken broth or add it in. Next time in place of the frozen corn, I will add in hominy. Very good recipe.
