This was great! The only thing I did differently was to halve the mayo and this was still plenty. I also omitted the almonds for the picky eaters :)

Condensed Milk Chocolate Frosting

This recipe tastes great, but like some other reviewers, I had problems with the consistency and set up. I ended up making the following revisions: I doubled the chocolate and used 72% cacao baking chocolate. I mixed in about a tablespoon of corn starch with the chocolate and condensed milk. I left out the water altogether. The result was a slightly thicker frosting which spread on the cake better. I refrigerated the cake after I frosted it. I would still say this is more of an icing, but its easily the most delicious one I have had in a while!

Imitation Meatloaf

This is great! I've already made it twice. The first time I followed the recipe to a T and it was pretty good, just a little bland. The next time I was out of eggs, so I substituted a can of condensed tomato soup and left out the tomatoes. I also doubled all of the seasoning ingredients and made a ketchup and brown sugar glaze for the top- it was moist and very flavorful. My non-vegetarian boyfriend loved it!

Deep Dish Brownies

These were really great. Per other reviewer's suggestions, I only used two eggs and halved the baking powder and added maybe a cup of chocolate chips. I also used a cream cheese and egg combination to swirl over the top to make them marbled cream cheese brownies. These were probably the best brownies I ever tasted!

Molasses Sugar Cookies

My mom always makes the best molasses cookies so I was hesitant to make any myself. I decided to give this recipe a try and I'm really glad I did! They came out perfect and chewy and were gone really fast. Putting a piece of bread in with them over night really helped keep them moist.

Florida Seafood Casserole

I never made a seafood casserole before, but this was so easy and tasted so great. I used imitation crab meat and frozen shrimp, and next time I might add some kind of white fish. The only thing I will leave out next time is the water chestnuts- apparently no one in my house likes them!

Boscobel Beach Ginger Cake

I made this along with a heavy fruit tart for Christmas desert. It was really nice and provided something on the lighter side. I only used about half the fresh ginger after reading the reviews and thought it came out great. I garnished it with powder sugar and whipped cream on the side.

My Best Clam Chowder

5 stars with some revisions: I'm from Boston and take clam chowder very seriously!! This is a good base but lacks a lot of flavor. First off, I double the canned clams and then add a bottle or two of clam juice instead of water. I add about 1 to 1 1/2 tsp. of thyme with the vegetables (and leave out the carrots). After the cream is thick I double the red vine vinegar and add Worcestershire sauce and hot sauce to taste. This makes it a lot more flavorful in my opinion :)

White Chocolate Fruit Tart

This recipe is amazing. Its so simple but the tart looks so beautiful and professional. I used a 9" springform cake pan and that worked fine. I wouldn't change a thing, except next time I think I will use some blueberries.
