Pistachio Crusted Chicken
Delicious! We had a bag of pistachios to use up so I tried this recipe using other reviewer suggestions for the sauce proportions. I didn't cut the chicken breasts up, just baked them whole. Served with mixed sauteed veggies on the side. Leftovers reheated well.

Slow Cooker Chicken Taco Soup
I love the easy, no-fat, no-bother cooking in the crockpot. This recipe is no exception! I bumped up most of the seasonings by 1/2 teaspoon and chopped up the chicken before putting it in. Bite sized pieces are fine with me! I threw in some fresh cilantro at the very end, and served with sour cream, avocado and tortilla chips. Much less work and mess than making tacos!

Broiled Tilapia Parmesan
Everytime I've made this, I've had nothing but raves from friends and family. I eyeball the seasonings, always try to use fresh instead of dried basil and add lots more black pepper. I have used this recipe for tilapia, basa, sole and cod. Definitely a great, slightly cheesy, flavorful recipe for any white fish!
