Apple-Cheddar Tossed Salad

Reviewed: May 14, 2007
This was very good. I was a little leery because the ingredients sound a little unorthodox, but everyone loved it! It will definitely go in my "keeper" binder!

Spicy Mexican Salad

Reviewed: May 4, 2007
This salad turned out really good. I used the jalapeno ranch dressing (I found it in the refrigerated section with the lettuce) and it was really good with it. I also left out half of the pinto beans and put in a little extra lettuce to give it more of a "salad" vibe. Since other reviewers commented on the chips becoming soggy, I just sprinkled them onto the individual servings to avoid messing up the leftovers. Everyone loved it, it went well with a Mexican-themed meal, and is definitely a keeper.

Churros II

Reviewed: Apr. 28, 2007
I made this for a party/meeting and they were a hit. Everyone loved them. I will definitely make them again. I did make sure to use a cloth-type pastry bag and it worked great. I had to pinch each one off into the oil as they didn't just break off, which was totally fine. They did cook pretty fast, so I was getting behind on coating them with the cinnamon/sugar. So, I figured out a quick (and much easier) way to do it. I would scoop them out of the oil with a large flat slotted spoon onto paper towels just long enough to put the next batch into the skillet. I would then dump the hot churros into a ziploc bag with the cinnamon and sugar, shake it up and then just took them out with my hands and placed them on the serving plate. That worked great and they were perfectly coated.

Chicken Wild Rice Soup I

Reviewed: Apr. 2, 2007
This was really good (after I spiced it up a little). I am from Louisiana, so it was a little bland for me. I added garlic powder, cayenne pepper, and white pepper to give it a little kick. Also, I did not have any almonds, so I left them out. I could not find straight-up wild rice, so I used uncle Ben's pre-cooked long grain and wild rice. Anyways, it turned out really good except it was a little too thick. I may decrease the flout a bit next time. Great recipe. Thanks so much!

Stuffed Pork Chops

Reviewed: Mar. 17, 2007
This was pretty good. I saw the recipe was from a Texan, so I was expecting something a little spicier, but it was more of a midwestern-type dish. I served it with the extra gravy over brown rice and sweet potatoes on the side, so it was a very fallish and cozy dish.

This is a great dish. My husband is learning to cook, as he found this recipe and cooked it on his own and it was delicious!

Rempel Family Meatloaf

This is an excellent recipe. It is bursting with flavor and very moist. I think the cheese is the secret ingredient meat loaf has been needing. Definitely a keeper.

Roasted Corn on the Cob

I didn't think the flavors blended well on this dish. I prefer mine with just butter, salt, and pepper.

This is an incredible recipe! I did decrease the sugar as some people recommended and it was great. We made a huge batch for the homeless shelter and everyone loved it1!

This is the best banana nut bread recipe I have ever tried! The flavor is perfect and I loved the cinnamon and sugar coating on the bottom. It is just such a nice touch.

Absolutely The Best Shrimp Scampi

Reviewed: Mar. 13, 2006
WOW! This dish was amazing!! I did make some changes. Instead of brandy and white wine, I used tequila and marsala, and I used yellow onion instead of shallots. I am originally from Louisiana, so I like my food with a lot of spice, and this was popping with flavor! They were very crunchy and had an amazing flavor. We used very large shrimp and ate them plain instead of over rice or pasta. You have got to try it!
