About this Cook
My favorite things to cook
I love to bake!
My favorite family cooking traditions
I don't really come from a big cooking family! I guess I am going to be the one to start the traditions and pass them on to my children.
My cooking tragedies
One of the first things that I tried to bake was a pound cake. It was terrible! I am scared to attempt it again! I have also burnt bolognese sauce whist being distracted on the phone!

Banana Bran Muffins
These are the best muffins that I have ever made! I can't believe how moist they are. I only had two bananas so made 6 muffins. I added chopped pecans and also substituted rice milk, whole wheat flour & shortening. A must try!

Best Ever Muffins
These muffins were really tasty. I baked them just as the recipe said. I used 1 cup of shredded coconut in the batter. I then topped them off with some chopped pecans and more shredded coconut. Yummy! TIP - To get your batter to dome, preheat the oven to 425 degrees F. As soon as you put the muffin batter in the oven, reduce the heat to what the recipe says. The initial high heat causes the batter to have greater oven spring or the rapid rise during the first few minutes of baking.

Bob's Awesome Lasagna
I thought that this was a good recipe. I made my own sauce, I think it couls use a little more than the recipe calls for, but thats my taste! I used about half the amount of mozarella , and it was still great. I put foil over the top of the pan for the first 20 minutes of cooking as I had seen this in some other recipes (helped to keep the cheese from becoming burnt I think) I added fresh garlic and basil as I think it improves the flavor.
