About this Cook
I'm newly retired after a long career as a family therapist. My cooking skills were adequate to feed and raise two healthy children on the run, so to speak. Now they're gone, life is slower, and I'm trying a lot more new things for my husband and me. He just bought me a set of Messermeister knives which really makes cooking wonderful. I'll never use a pre-packaged green salad again if I can help it.
My favorite things to cook
I prefer baking, roasting, and slow roasting compared to stirring and frying on the stove. Baked ham, stuffed pork chops, pumpkin pie, and all the holiday cooking, including 4th of July.
My favorite family cooking traditions
My mother raised us on simple fare....mashed potatoes, gravy, biscuits, meat loaf, and tapioca pudding.
My cooking triumphs
My Christmas dinner last year when I served stuffed pork chops. My brother is a chef, and he raved about them.
My cooking tragedies
The first lasagne I ever served to my husband. Ugh!

Chocolate Walnut Fudge
This is a great recipe, and I've only made fudge maybe twice. I took someone's advice and let the cut up marshmallows melt before I started the timer for boiling. I wanted to mail the fudge, so I added twice the amount of choc chips, as the first batch was creamy and delicious but I was afraid if it sat in the sun during transport to Mississippi, it might be too soft. The extra chips made it quite firm but it was still nice and creamy. If you make it with extra chips, it won't take as much beating. I noticed it was getting ready to pour in the pan at about 3-3 1/2 mins. Thanks for this recipe.

Slow Cooker Spaghetti Sauce II
This is a flexible recipe, and a great way to make spaghetti sauce ahead of time to put in quart baggies to freeze. Loved it. Thanks
