Apple Dip
This is so good. Made it yesterday with neufchatel cheese, 1/3c br. sugar, and just poured in the vanilla. didn't have a chance to try it then, but I've eaten it with two honeycrisp apples today and it's been a real effort to not just sit down with a spoon and polish off the rest. I've not been patient enough to let the dip soften to RT before I eat it, but imagine it would be even better if it could soften and be a bit more dippy. Will most definately be making this again...

Crunchy Bagel Chips
These chips are so easy, and highly addictive... I only make them when we're having company, otherwise I'd just sit down and snack until the whole batch is gone. I sub garlic powder for the salt and use Trader Joe's Everything bagels (I just keep them in the freezer until I need them, then thaw 2 or 3 in the fridge overnight), and the flavor is fantastic. Watch them closely after 15 minutes- they brown very quickly after that point.

Awesome Egg Salad with a Kick
this was really good - we had it for lunch on Triscuits, and it hit the spot! I scaled the recipe back to 6 servings, made a few small adjustments- white onion since that's what I had on hand, and omitted the bacon- didn't have any. I also just estimated the amounts I added to minimize clean-up - my proportions were close, but you could certainly tweak this recipe to taste. Definately one I'll be making again soon...
