Cheesy Potato and Corn Chowder
Talk about comfort food!!! This chowder is nice and thick, and I love the slight kick from the chiles. Definitely going on my favorites list.

Confetti Potato Pancakes
Delicious. I added about 1/4 cup more flour. I served this with Lemon Garlic Tilapia.
