Cranberry Sauce

This was so nice and simple. I did add 1/4 tsp of cinnamon to the mixture. Nice mix of tangy and sweet. The orange juice didn't overpower the cranberries. Gelled up nicely.

Gingerbread Waffles

I liked the flavor of these waffles, but not the texture. They were too soft for my liking... Not quite sure why there were raisins in them.

I left out the green onion, and used cheddar instead of monteray jack (that's all I had). These were AMAZING. Even the kids gobbled them up. Served with a mixture of ranch and salsa. Definitely a keeper!!!

Chewy Brownies

Decadent Chocolate Orange Cake

Everyone LOVED this cake. It was not too sweet, and the pairing of the bittersweet chocolate and orange was great. My only thought was that there could be more of the cream cheese filling.

Fresh Tomato Basil Sauce

This was my first attempt at home-made tomato sauce. It was a great way to use some of the tomatoes from our garden. First of all, the smell in my house while making this sauce was divine! I didn't like the consistency of the sauce after the two hours of cooking. I took the sauce and pureed it in the blender, returned it to the pot and cooked for another hour. I also added red pepper for a bit of a kick. We liked the flavor of the sauce, although I think that next time I make it, I'll add some tomato paste to thicken it up.

Patriotic Poke Cake

We loved this! The cake was super moist and the cool whip topping was a nice change from buttercream. The kids liked that the cake was red, white and blue. Good cake for the 4th of July. We decorated the top with strawberries and blueberries.

Gramma's Old Fashioned Chili Mac

This was a nice simple meal. I left out the pepper and celery (partially because I didn't have them, but also because we don't like them!) As written, it was a bit lacking in flavor and a bit too sweet for my taste. I added some garlic powder, oregano and italian seasoning. With the additional spices, it tasted great!

Bacon Potato Omelet

This was a nice change from the normal breakfast routine. I did use shredded potatoes, because I didn't have diced potatoes. I also added an extra egg because three eggs just didn't seem like enough. Nice flavor!

Rich Macaroni and Tomato Bake

I used vegetarian bacon and pepperoni in place of the traditional bacon. However, my sauce didn't curdle like some other reviewers mentioned. However, I thought it needed some salt (maybe thats because I didn't use real bacon). Everyone liked this recipe, although my husband couldn't eat too much because he thought it was too rich.

Spinach and Potato Frittata

My family went crazy for this recipe! A great departure from the normal eggs or quiche. It did take quite a bit longer than the 5-7 minutes to cook however.

Real Italian Calzones

These came out delicious...next time I'll definitely at least double the ricotta cheese...I guess I am just used to calzones with a LOT of ricotta cheese in them.

Restaurant-Style Coleslaw I

This was great!!! I substituted soy milk for the regular milk and buttermilk to make the coleslaw non-dairy. You would never know that I substituted! I also added some craisins (dried cranberries) on a whim. It tasted awesome! We couldn't get enough.
