Linda's Lasagna

Just what I was looking for! However I did not bake it! I made it in a large stew pot and simmered it for an hour or so. I ate some of it for dinner and then froze the rest in glass jars. Microwave to thaw, and then heat it to proper temperature and then (LOL) I just eat it out of the jar. No dishes mussed up! Live alone so I can get away with this!

Breakfast Pies

Decided to use pastry shells, 8 to a box, instead of biscuits! Refrigerated the leftover pies in a plastic bag and, a 10 second zap in the microwave or cover with foil, and put into a 220 % toaster oven, till heated through. I might have cooked the sausage too long as it was kind of dry and hard. I might try this with bacon, or leftover ham......I froze some, to test and they do freeze well.

Pie Crust IV

Very good, but I know a secret about pie crust. Too bad I can not find "Wondra" in the five lb. bags at the grocery store any more!.........With that flour there was no way you could not have a wonderful flakey crust and it would get 10 stars!

Chicken Crumb Coating

This is for Fanny Haddock , Fanny, the recipe is for a mix that may be used as needed. Probably will even last longer if frozen. I freeze my crumb mixtures and therefore have them ready at a moments notice.

Parmesan Chicken

Very similar to a baked Garlic Chicken recipe, from this site, except that I sautéed this and loved it. Freezes well! I live alone and I am always looking for recipes to make and then freeze in portions. This one I doubled and froze most of it. Since it thaws so quickly it is handy for a quick lunch or dinner. Also great for sandwiches.

Garlic-Herb Roast Pork

I did not mess with this recipe, except that I did not have sage on hand! What makes this so exceptional, is the fact that it is so moist and tender. Also I often rate for freezing. I sliced partions, and froze them. Pleased with the results!

One-Egg Egg Drop Soup

Did not have green onions on hand, grated some white onion, that's fine. Also used the corn starch, that's fine. Frankly I love this recipe. It has become one of my favorites as I always have all the ingredients on hand. (Using the above substitutes)It is quick and easy, and freezes well!

Garlic Chicken

Simple to put together, and very good. Freezes well, stays moist! I did not have bread crumbs on hand and so I crushed some Ritz crackers, and loved that, as a substitute. (I put the Olive oil in a cup with the crushed garlic and microwaved for about 15 seconds. Works well.)

Fabulous Fried Cabbage

Green Chile Frittata

Disappointed! I thought it would have a little fire, but in truth, I could not taste the chili peppers. Other than that it was OK. Next time I will add other veggies and some hot sauce and save my chili peppers for a dish that allows me to taste them! I did serve them with salsa and sour cream to add some oomph!

Salsa Chicken Rice Casserole

Two things! First I cooked the rice with Wyler’s chicken granules added to the water. Second…I never would fix the chicken that way. It is so much quicker to cut the chicken into chunks first and then parboil it. (However I did not even do that, I cooked it in with the onions and other things :) while they were sautéing!) Very good, and I must also add very “adaptable”!

Yellow Squash Casserole

I steamed the squash and let it air dry, and cool.Then removed it to a large mixing bowl. I also added bacon to this recipe, a good addition. I sautéed the onion in the bacon drippings after removing the crisp bacon. I crumbled the bacon into the squash and added the onions to the bowl. The only other change I made, was to eliminate the milk. It was not needed and made the dish watery. I experimented with freezing a portion, and I found it to work fairly well, if the milk was not used! Good flavor and a good side dish or the main meal. (Needless to say I doubled the onions and cheese, to suit my taste buds!)

Jamie's Minestrone

This is one of my favorite soups to make and freeze portions for later. It is most adaptable, and no matter what you add, it is just wonderful. The only change I made to the basic soup is to use all broth instead of 1/2 water. I am leaving now to make a pot of this. Today,I am adding some deer sausage my son gave me. It has jalapeno peppers added and I think it will be a great addition.

Teriyaki Pork Tenderloin

This was sooooooooo good! I broiled it in an iron skillet and it was perfect. I prepared some carrots, potatoes and onions to broil along with the Loin. After I removed the Loin to a platter to rest, I slipped the veggies into the skillet and turned them in the drippings. MMMM Good. A new favorite!
