Baked Tofu Bites

Not bad, but REALLY salty (and man, I LOVE salt). I will remake with more maple syrup and low sodium soy sauce... * I should note that I boiled off some of the marinade's water and tossed the cubes in there after cooking. This gave me the "look" achieved in the picture. However, it also gave me a super salty product. I would have given this 3 stars, but as I strayed a bit, I gave this 4.

Brunch Enchiladas

Um, yum. Total crowd pleaser, great for large groups and serious bonus points for being able to make ahead of time. I followed almost exactly, though did sub milk in for most of the 1/2 and 1/2. Still a total winner :)

BBQ Bacon Ranch Dip

I was really suspicious about this one, but with a couple of edits, this was a HUGE hit. Edits: I used a little more than 1/2 the amount of ranch called for, based on the reviews of others. I also used 1 pack LF cream cheese and 1 pack Neufchatel cheese and whipped it quick with a handmixer -- great consistency. I had some leftover cubed chicken, which I threw in the pan with the BBQ sauce and heated, adding the bacon bits too. I spread the warm mixture over the cheese base and topped with the remaining ingredients. Served with scoops. Perfect game day dish :)

Chocolate Fudge Buttercream Frosting

Perfect. Made it with the One Bowl Chocolate Cake III. Made the cake and frosted the night before, taking it out of the fridge 20 min before serving -- it set perfectly :)

One Bowl Chocolate Cake III

This is the PERFECT chocolate cake. I made in two 10"pans and cooked for 30 minutes. Make sure you grease and flour pretty liberally, as sticking was a little bit of an issue. I followed this recipe exactly, pairing it with the "Chocolate Fudge Buttercream Frosting." It was to die for -- I had several people tell me it was the best chocolate cake they had ever eaten. Likewise, non cake-eaters were even scarfing it down. As suggested by some, I made this the night before and let the cake sit overnight; I took it out 20 minutes before serving and it was just perfect. Thanks for a great recipe :)

Red Skinned Potato Salad

I made this without the bacon and it was a 4 star recipe. I gave it the benefit of the doubt, knowing that bacon usually adds a star to any recipe ;) I added a titch of mustard and topped with chive, but otherwise stuck to the recipe. Yum!

LOVED this recipe. Loads better than store bought, and a breeze to make. I used hearty steel-cut oats, a little less sugar, pecans and dried cherries. I left out the walnuts and sunflower seeds. I will definitely make. Thanks annie9 for a great recipe!

Chicken and Biscuit Casserole

Awesome. LOVE that this recipe does not include canned soup. We used 3 good sized chicken breasts (shredded) and more veggies. Also threw in more garlic. Oh, and this was totally delicious using buttermilk biscuit dough from the refrigerator section. YUM!

White Chocolate Fruit Tart

WOW! I did not change a thing. OK not totally true–I used reduced fat cream cheese and switched up the fruit toppings. But seriously, this recipe is TOTALLY amazing. I meant to take a photo and upload it, but it was devoured before I got a chance! Next time I will try to load more fruit on top, because I ran out of room and had some wonderful toppings that did not get used. Used blueberries, strawberries, kiwi... YUM!

Chicken Enchiladas I

I have made several different versions of enchiladas and I must say, I REALLY loved this filling. The tomato sauce seemed a little odd at first, but it really made for a delicious mixture. I followed this pretty closely, but a few small changes: I sauteed the onions and garlic, used shredded chicken and left out the green peppers (FYI: next time I would add green chiles or jalapenos instead of the green peppers). I also poured 1 small can of mild enchilada sauce AND a small jar of hot taco sauce over the top. Yum! Will definitely make again. Thanks!

Jalapeno Popper Spread

5 stars only if: you triple the jalapenos. Way too mild otherwise. I used a combo of jarred and fresh peppers and served with sliced, toasted baguette bites. It was devoured.

This punch rocked. I added way more cherries than the recipe called for and used a bottle of champagne instead of sprite. Served this at New Years and it was very potent! Not too sweet either–the guys and girls all loved it. Thanks for a great recipe!

Smoked Salmon Mousse

Wow. Super easy. I used partially-cooked smoked salmon, which my grocer only had in 3 oz. and scaled back the recipe. Turned out fabulous! I didn't change a thing, though next time I will experiment with horseradish and tobasco, as some have recommended. Yum!

The Best Rolled Sugar Cookies
