Sean's Falafel and Cucumber Sauce

This is a fantastic recipe! I used Middle Eastern yogurt as a base for the sauce and I oven-fried the patties as suggested in other reviews. Other than that I made no changes. My dad, who was a falafel virgin, LOVED these. I will definitely make again, thanks for the great recipe!

German Apple Pancake

Delicious! I didn't let the batter stand long enough and I think my oven was broken because I had to cook this a lot longer than the recipe called for. I think next time, brown sugar and more apples!

Lentil Soup

Wow. This is the best lentil soup recipe I've ever tried! I had to make a couple of substitutions based on my kitchen's content (red onion, white balsamic vinegar of which I added 2 xtra T!) but that was it! This is a terrific starter recipe and I'm excited to see how creative I can be with this. Next time I might try adding some different root veggies. This is a winner without cheese added to it!

Black Bean Rice Burgers

I'm only giving this a 4 because the original recipe seemed a bit bland. However, this is a great starting point for delicious and convenient patties! I took others' suggestions of adding breadcrumbs and also seasoned these with adobo seasoning and cumin. Instead of brown rice I used quinoa. Will DEFINITELY make these again thanks!!!

Blueberry Peach Muffins

These were pretty good; a basic recipe that could be made better with tweaking. I used fresh blueberries and some very ripe apricots which added to the texture. I took the advice of some other reviewers adding less sugar and putting the cinnamon mixture in the dough. Next time, I will add more sugar and probably use one less egg as I felt these were WAY too dense and not sweet enough. I would also reduce the oven temp and/or the cook time. Any suggestions as to what could make these fluffier?

Japanese Zucchini and Onions

This is a great basic recipe with lots of possibilities! I used sesame oil and added cubed firm tofu and some diced garlic to the mix. I also added a splash of rice vinegar. That really made the other flavors pop and reminded me of something from a hibachi restaurant. Put this over brown rice and you have a nutritious and filling meal. WONDERFUL!

Christmas Creamy Egg Nog

YUMMY! I made this for my Christmas party and everyone loved it! I doubled the recipe but kept the amount of rum the same as I prefer my nog to be less boozy, but left the bottle near the punch bowl so others could flavor to tasts. Didn't have allspice, so I used whole cloves. My friend who LOVES egg nog said it was better than store bought!

Cabbage Jambalaya

Pretty good but this made WAAAAYYYY too much for one person and more than half of it went bad in my fridge. I used red cabbage and would probably use green or white next time as the purple color was a bit off-putting.

Chicken Fried Chicken

So so so good! I made this for 3 of my friends for the Pats/Cowboys game yesterday and they loved it! I was a little nervous since two of them are Southerners but they agreed it was some of the moistest and crunchiest chicken they'd ever had. I made some modifications such as adding garlic powder, onion powder, smoked paprika, cayane pepper and chili powder to the mix. I also used 2 eggs and fried the chicken in a mix of vegetable, canola and chili oil. Thanks for the recommendation to cut the breasts in half and tenderize them. This recipe yielded 6 thick strips of chicken that didn't survive through half time! Go Pats!

Barb's Pumpkin Chocolate Chip Muffins

DELICIOUS! I love pumpkin anything and was eager to try out this recipe. I substituted the chocolate chips with raisins since I feel their texture and earthy taste better compliments the pumpkin and spice flavor. Taking another reviewer's suggestion, I added more spices to this than suggested in the original: cinnamon, cloves, nutmeg and allspice, all of which this recipe benefits from. I expected the muffins to be dense since pumpkin puree is extremely heavy and moist. I used my KitchenAid mixer for the wet ingredients and slowly added the dry ingredients to the wet... I think this made for slightly lighter muffins. My end result was 24 bright orange, spicy-scented muffins that my friends and roommates thoroughly enjoyed. Remember to grease the muffin tins WELL and use about a 1/3-1/2c of batter per muffin (fill the tin) because your muffins will develop a nice top this way. I can't wait to make this again!

Dash's Donair

I absolutely love the Donair part of this recipe. I used ground sirloin because it was on sale and cooked the loaf for a little less time than the original recipe suggests. It's great that you can really get physically involved with making this loaf and the result is flavorful and surprisingly moist. I chopped up tomato, cucumber and white onion to go inside the whole wheat pita. Next time, I'll use bread that's more like Naan or a softer, chewier pita. I wasn't a fan of the sauce... it was too sweet for my taste. Something salty and/or tangy, like sour cream, hummus or dill yogurt, would be a better pairing for the meat.

Rosemary Mashed Potatoes and Yams

This was delicious! It made my whole apartment smell more homey and comfy. I used fresh rosemary and grated cheddar cheese. I also sprinkled the top of the potatoes with crushed flax seed before I baked it... a nice golden crust was the result. Very good, I'm looking forward to making it again!

Vegetarian Bean Curry

Very good, but not good to eat before a big date! Also, made my whole apartment REEK for about 5 days. Still, totally worth it for the protein punch. I used crushed red pepper and chili powder instead of cayanne and added sweet italian peppers and shiitake mushrooms. Very yummy on brown rice or whole grain pasta.

Coronation Chicken

Wicked good! I didn't include the cashews and used regular rasins and lime juice as I forgot to purchase lemons. This came out great and will be very tasty to eat for my dinner during the upcoming week. I put it on a bed of brown rice. I'm going to try it with reduced fat mayo or maybe plain yogurt to make it a little healthier. A+!!
