About this Cook
I'm a mom to two great children - daughter and son, both of whom are pretty good about eating and trying new foods! Our dinner times are family times, and the kids are involved in picking out recipes, planning weekly meals, grocery shopping, and cooking. My 14 year old is already a great cook for her age, and makes dishes such as red beans and rice and salmon! She even recently did a project on cooking and scrapbooked the recipes into a cookbook.
My favorite things to cook
I love to cook Asian foods, fish (mostly salmon), and pastas. I'm venturing into Mexican and Indian dishes. We're a very active and busy family, so recipes that are less complicated but use great ingredients, resulting in fabulous dishes, are what we search for!
My favorite family cooking traditions
Thanksgiving and New Years Eve Dinners. These are great times for my family...my siblings and parents meet for a huge culinary fest that strays from tradition (anything from turkey to sushi) and brings forth new recipes to add to each of our own collections.

My cooking tragedies
I had a difficult time learning to cook. Both of my parents are outstanding chefs - mom, being Asian, and dad very skilled in American cuisine. They wanted each of their kids to take a night of the week to cook. I could never read the recipes right, and would constantly make beef stew with the potatoes undercooked or chicken divan with whole bone-in breasts, forgetting to cube the meat! It's a miracle that I have gathered a small collection of tried and true recipes!

California Chicken Spaghetti
Great dish!!! Absolutely 5 stars, and my daughter just packed it for her lunch tomorrow before we've even cleared the table. Alterations: as suggested, used the entire box of angel hair pasta, used 1 15oz can of seasoned diced tomatoes (I might use 2 cans next time), only 1/2 T of Emeril's Bayou seasoning. To serve, I placed all the pasta into a large pasta dish, poured the chicken/tomatoe mix on top, added a layer of asiago cheese (very thin layer), and then covered it with regular feta. Delicious!! :-)

Slovak Stuffed Cabbage
I thought this was a good recipe that froze well. The taste is very European so it may be an acquired taste. I made this for a family from Romania and they loved it...could not stop eating it. I will keep the recipe in my recipe box, but probably won't be making it for my family again in the near future.

Quick and Easy Tuna Casserole
Based on some of the reviews I thought this recipe would be great - I gave it only 3 stars. I have to admit it was quick and easy, though. I took the advice of some of the readers and added 1/4 c milk, 1/2 c sour cream, sauted the onions in olive oil before adding, 5 cheese slices and 1/4 block of colby jack. After mixing it all, I transferred to a casserole dish, mixed bread crumbs (fresh) and butter together to make a crunchy topping and baked for about 20min in a 350 oven. The kids ate their entire servings, so they liked it, but there were no raving reviews from my family.
