Italian Sausage Soup
I agree, this was fabulous. The most time consuming task was browning the sausage. Next time I will add a chopped onion. I also used diced tomatoes and added dry Italian seasoning. We don't like soggy zucchini, so I added it a few minutes before the spinach. I used more spinach also, and topped with parmesan cheese.
