Easy, Speedy Corn Muffins

Wonderful recipe. I doubled the recipe to accommodate the 12 people at the pot luck. I was out of buttermilk so I added a can of evaporated milk and 1 cup of 2% milk. I also used safflower oil in instead of plain vegetable. They came out great. I brushed melted sweet cream butter mixed with honey on the tops as they came out of the oven. The double recipe produced 18 muffins and a 8-inch pan. They were a hit.

Light Oat Bread

Amazing. More compliments came from this bread than any other out of my bread machine. I added 1 tsp. of honey just to add to the flavor, and I have been bombarded since with recipe requests. thanks.

White Bread For The Bread Machine

Tastes just like the out of box bread machine products. I used all-purpose flour instead, and this bread still came out great. Nothing like adding butter to fresh homemade bread. yumm!

Chess Pie III

This tastes like a cross between a pudding pie and a custard. I added a cinnamon meringue to the top, and this pie came out great. I have to admit, I had my reservations at first. Unless we try new things, we are stuck every holiday with the same boring choices. So surprise someone with something new and tasty.

Meringue I

I gave this recipe a 2 for sending cooks down the wrong path. You are not looking for your corn starch, water, and sugar to turn into a clear 'syrup'. You are looking for a 'gel' instead. Make sure your mixer is on high when adding the 'gel' in. If you see the consistency get soupy, that means your 'gel' was not thick enough. Apply your 'gel' liberally into your whipped egg whites to keep the airy peaks. Make sure also to whip your egg whites away from your oven and do not try to do a meringue in high humidity or foggy days unless you want soupy results.

Moist, Tender Spice Cake: Gingerbread Variation

I made this for my fiance's luncheon for work. I used a 10 inch bundt pan instead of a 9x13 inch flat. I increased the cook time to 60 minutes to compensate for the change. This went over fairly well with her workmates. I gave it a 4 because she usually comes home with recipe requests.

Oatmeal Pie V

I decided to forego the cloves and cinnamon and add the 1/4 cup cocoa powder and 1 cup of pecan halves along with the oatmeal. This was a huge success. The pie tastes like a cross between a brownie and a pecan pie.

Buttermilk Chess Pie

This is very similar to the buttermilk chess we make at my restaurant. The only difference is that we add 4 ounces of dessicated coconut inside the shell before pouring in the filling.

Dark Chocolate Cake I

I made this for a dinner at my girlfriend's parents' house. It is a very rich cake, that must be eaten in small pieces. I separated the whites from the yolks and whipped them until thick peaks, then folded them into the batter to make the cake more fluffy. here is the chocolate-almond buttercream frosting recipe I used. --1 stick butter(soft), 1/2 stick of butter shortening, 1 1/2 tsp. of almond extract, 4 1/2 cups of sifted powdered sugar, mix that all up and melt another 1/2 stick of butter in the microwave with 2 squares of unsweetened chocolate and 1/4 cup milk chocolate chips. Then add to the frosting while blending. If you think it's too thick, add 1-2 tsp. of milk to thin it out.

Chocolate Layered Pie

This pie has the exact consistancy, style as peanut butter pie. The crust is really what makes this pie, I plan on using it on other pies in the future. I found the flavors kind of lacking though, needs more umphh. Perhaps 4 oz. of unsweetened chocolate, 2 TBSP of margarine melted and 1/2 cup of powdered sugar mixed and added to the top of the pudding before the whipped topping is put on.

Carrot Cake I

I didn't have the cream cheese to make the frosting for this cake, so I used a vanilla buttercream and it turned out great. I also used a sheet cake pan to cook this in,1 tbsp of sour cream, and 3/4 cup of oil like others suggested. still moist after 4 days.

Pineapple Pie III

I've never had pineapple pie before and this recipe came together fabulously. I used a homemade double pie crust from the Betty Crocker cookbook and it added the perfect amount of crispiness to really give this pie the needed oomph. The pineapple flavor isn't overpowering like I thought it would be thanks to the lemon juice. Thank you...will make many more times in the future.

Banana Banana Bread

a very subtle recipe that can be personalized. The only deviation I made was to brush the top of the loaf with melted cinnamon/butter prior to baking. Next time I make it, I will add nuts. Perfect recipe for those that are not into over-sweetened desserts.

Fish in Foil

I gave it a 4 because I had to spruce up the taste ,other than that the idea is great and I use something similar with my freshly caught fish. here is what I did: I saute the 2 teaspoons of fresh minced garlic and 1/2 tsp. of lemon zest in the olive oil. removed the oil from heat and added cracked black pepper and 2 tbsp. of rice vinegar. broke the filets down to 4-5 inch sizes and brushed the oil mixture on them, then added 1 pinch of dill weed and 1/2 tsp of a cajun spice blend. one small onion slice, 1 slice of a jalapeno and a half slice of a lemon. these were a hit.

Garlic Bubble Ring

It's a neat idea, but the effect just isn't reached. I do like the space in the middle for a marinara bowl in entertaining purposes. I made this recipe twice. The second time I refrigerated the liquid and spooned it throughout the bread which made it much better. Too much butter though...
