Easy Vegetarian Stroganoff

I'd have loved to have given this a better rating but there was a lot of work involved in making this a true vegetarian meal... I am vegan and went a step beyond that as well but that has nothing to do with the rating. The cream of mushroom soup is a no go for vegetarian so I had to make homemade soup first. At that point there is so much in this recipe that was not called out, that it was no longer THIS recipe. It was a good start though and what I came up with as a result is a keeper. Thank you!

California Grilled Veggie Sandwich

Oh.My.WORD!! This was simply amazing! I didn't "change" the basic format of the recipe as in the blend of flavours, but I did convert it to vegan. It was out of this world! Using only vegan friendly substitutes I had the best meal I've had all week! THANK you!

Vegetarian Cabbage Rolls

It was a good start but I can't give it 5 stars since I made more than one change.I didn't use tomatoe soup, I used two cans of stewed tomatoes. I used a large can of diced tomatoes rather than the whole peeled. I also cut out the egg (I'm vegan), the peas (seemed wrong), the onion or garlic powder (we're already using onions and garlic in the recipe., and substituted chili powder for the cayenne, and cumin for the red pepper sauce. Gave it a pleasant southwestern flavour. This was a lot of work but it made a a generous amount which I froze a great deal of in meal size portions so I would say it was worth it.

Roasted Garlic Scalloped Potatoes

Ahhhh SUPERB! I didn't bother peeling the potatoes, just sliced them with my mandolin. I also couldn't find the 19 oz roasted garlic potatoe soup so I went with a homemade cream of potatoe (can't use cow's milk) that I added some garlic to. The cream I replaced with soy milk, and the cheddar with cashew "cheese" (vegan), and had NO regrets! My fussy youngest even said "HEY! This IS good!"

This was unexpectedly great! It has depth of flavour and the vegetables come out PERFECT while the beans maintain their integrity. I ate this SEVERAL times during the week and not ONCE was I tempted to throw it out because I was sick of it!

Vegetarian Chili

The best chili I have EVER had! I topped it with cashew "cheese", Tofutti's "Better than Sour Cream", and a splash of TACO sauce... I ate until I reached the "omgimgonnaexplode" state. It's even SUPERB as a leftover and stands freezing VERY nicely.

Connie's Zucchini 'Crab' Cakes

I have nothing but great to say about these. As I fried them, I kept the finished ones hot in the oven and ohhhhh they were the best use of zucchini I have found in a LONG time! I made a "dip" of tofu mayo and horseradish for these... a dollop atop each and what a SWEET supper I had!

Pizza Dough II

At LAST!!! A pizza dough recipe that doesn't end up with "white bread" results! Beautiful dough! The ONLY draw back was this... if you don't LOVE making pizza FREQUENTLY, don't let your kids try this... you'll get nagged ENDLESSLY for "more of that PIZZA soon Mom!!"

I'd give this one five stars if I didn't have to adjust a thing, but I DID make my own cream cheese filling from spring onion, cream cheese, a bit of minced garlic, and white pepper. Aside from that... a HUGE hit at my house and another recipe I took the time to print out and add to my old brass recipe box.

Roasted Potato and Garlic Salad

I really wish my kids had liked this better because I personally found this to be a delightful recipe for potatoe salad with ZIP and appeal. It made my mouth water just MAKING it... eating it was the reward. It doesn't taste as wonderful after it sits overnight but as far as it goes when FRESH... out of this world!

Cheddar Buttermilk Biscuits

THIS recipe earned a "print out and keep" in my old brass recipe box. Provided you remember to handle the dough as little as possible, you get a delicious and flaky biscuit with rich flavour. A little old Southern trick... melt some butter and as you finish cutting each one, a brief dip of the top in the melted butter before setting it on the baking pan, adds a certain something special to your finished biscuit.

Laura's Unbelievable Chicken and Pasta

You know I can't say enough good about it. All I added beyond the original recipe was minced garlic. The nice part is, various people in my family won't tolerate the sauce or mixing stuff together or spinach... so I was able to pull out THEIR portion as I went thru this and by the end, those of us who actually love to eat FOOD, enjoyed this rich, tender, and flavourful dish without the griping of others "forced" to eat it. Perfect!

Pleasant Pork Chops

There is no improving on an EXCELLENT and simple pork chop recipe that makes 3 kids and one adult scrape the bottom of the pan and wish there was more.
