I'm 42 years young... trust me I know what I'm talking about LOL. I adore cooking and if I had the time, money, and opportunity I'd go to school, become a chef, and open my own vegan restaurant.

Hmmmm... anything really. I prefer vegan recipes but I WILL cook all sorts of things because I live in a mixed household.

We don't have any. I cook, they eat.

A four bean vegan chili and vegan white bread that makes people stop chewing and mutter "OHMAGAWD" before chewing faster LOL.

Tomato Spinach and Basil Soup
I made this soup, in a vegan version, by substituting vegan friendly ingredients, and I am utterly addicted. This freezes well too so I have weeks wirth of hot creamy soup available. Thank you!

Potato Spinach Casserole
This is a top notch comfort food and all I did was "veganize' it so I could eat it. Bravo!

Dirty Rice
I don't care what you name it, it's awesome. I used saffron instead of annatto, and some dried cilantro instead of fresh, as well as brown instead of white rice... but this is a wonderful recipe and needs NO improvement as far as I am concerned. Wonderful!
