This is really good! I forgot the onion. I didn't mean to but it was great without it. I have only one complaint... There wasn't enough to go around. I ate almost all of it myself before my husband got a chance to taste it. I really like the mint in it. But I think I'm going to have to grow some myself because fresh mint costs too much at the store. Next time, I'll double the recipe and remember the onion.

Baked Tortilla Chips
I'm only giving this three stars because it was just too spicy for our tastes. However, the concept is wonderful. I made a second batch and left out the spices and lime. We all loved them plain. But we also prefer our store bought chips plain, too. So, my suggestion is if you don't care for seasoned chips, just leave out the seasonings and lime and you won't be disappointed.

Basic Flaky Pie Crust
This is a very good basic flaky pie crust recipe. I see no reason to use anything else. In fact, I bought some ready made crusts from the store and after I got them out of the package, I decided to throw them out unused and make my own instead. It's so easy, I don't know why I even wasted my money on the store bought. There is no comparison on taste or quality either.
