Pumpkin Soup

I would like to say 4 or 5 stars, but it was way too peppery! Unfortunately 1 tsp of pepper took away from an otherwise wonderful soup. I would go with 1/4 or 1/2 tsp next time. And I only used 1/2 tsp of nutmeg which in my opinion was the perfect amount. Otherwise, I did adjust this recipe but pretty much stuck with the general idea. I didn't roast the veggies as I found this recipe while in the middle of baking the pumpkin. I just sauteed everything (added 1 clove of chopped garlic) and added vegetable broth and let that cook for 20 minutes before adding pumpkin and blending with the hand-held blender. Because I'm trying to be good, I used plain fat free yogurt in place of the cream and was still good. I think it would have been extra special with cream and the roasted veggies. This is definitely an excellent soup but I would reduce the pepper!

Chicken Makhani (Indian Butter Chicken)

Mmmm really good. I added 1/2 tsp of coriander to the mix and also 1 tbsp of ground almonds in place of the cornstarch mixture as suggested. Served over brown rice with pita crisps.

Spinach Enchiladas

This tasted really good, but I found the combination of the Mexican dish strange with the spinach filling. The filling is more suited to a stuffed pasta type dish in my opinion. That is not to say I won't eat all the leftovers. It was good!

All American Apple Pie

Awesome! Definitely put a cookie sheet under the pie to catch drippings. However do not put it directly under the pie (as I did) and instead put it on the next oven rack down. I had to keep mine in the oven a lot longer for this mistake! But in the end it was absolutely delicious with rave reviews from my family!

I am a big fan of regular chick pea hummus and make it all the time. I tried this one since I did not have chick peas in the house, and it was just okay. I think I'll stick to the chick pea variety!

Baked Teriyaki Chicken

Absolutely amazing. Best chicken ever! I did double the sauce like other reviewers suggested, but only used 1/4 cup of sugar. And I used fresh ginger. Served over brown rice with broccoli. I'm having leftovers for lunch today, can't wait.

Slow Cooker Spinach Marinara Sauce

I'm saying 5 stars with my minimal revisions. I used a package of frozen spinach and DID NOT thaw or drain, just threw it in as it was. I think that is what kept it from being too thick. Also I only used 1 6oz can of tomato paste. Also only added a sprinkling of S&P at the end of cooking. It was so delicious. My brother said it was better than store-bought!

Red Lentil Curry

This is fabulous. Very quick and easy! I followed the recipe, only substituting tomato sauce for the tomato puree. The puree would have made a nicer texture but this was still SOOOO good. Will definitely make again! Thank you!

Zucchini Yogurt Multigrain Muffins

May be the best muffins I have ever made! Some changes were that I used all whole wheat flour, quick cooking oats instead of oat flour, 1/4 cup sugar and 1/2 cup honey, only 2 eggs & no applesauce. They turned out perfectly. Will make these over and over again!

This was so good, definitely comfort food for me! I served with steamed asparagus and slices of french bread brushed with olive oil and herbs done under the broiler. Was a really nice meal!

These turned out excellent. They made 16 and were moist right to the last one, about a week old. I only used half the amount of cloves because I was afraid it would be too strong, but I think I would use the correct amount next time.

Peppermint Patty Brownies

Awesome. Received great reviews from co-workers, "to die for" & "sooooo good" to name a few.... I could not find York peppermint patties but instead used "cool mints" which I found at bulk barn. Also used cake flour, everything else was done right to the letter, including cooking time, and they turned out great. Used a non stick pan and put cooking spray on it as well, and just popped the entire tray of brownies out after onto a rack, and then cut them up.
