About this Cook
I have 6 yorkies.I am married.I have a stepdaughter named Alexis.I have a fraternal twin named Tim.I love to cook, read, draw and paint.I have to take kidney dialysis until I get a kidney transplant and am looking for diabetic/renal recipes to share and try, for people who have both diabeties and end stage renal failure.
My favorite things to cook
Italian,Chinese, mexican and just plain old down home cooking tried and true favorites.I am trying to convert recipes to fit my diabetic and renal diet needs.I have to cook my special meals just for myself and it is hard to find recipes for just one person that fit my requirements, and is also is possible for people to fix who happen to be on a tight budget.
My favorite family cooking traditions
I love cooking for family,so holidays are my favorite.I look for any chance to cook.I really don't have any traditions.I try to have holidays at my house at my families convience but any time is fair game as you never know when the ones you love will no longer be here on this earth. So they are welcome any time.I won't turn them away.
My cooking triumphs
Learning how to make candy and learning how to cook for people with special needs.I'll never stop learning.
My cooking tragedies
my very first attempt at making sour dough bread for my Dad.YUCK! Also my very first meal I cooked for my Dad when I got out on my own.I fixed fried chicken and green beans and bread and all the goodies, and I salted everything way too much.I was SO nervous ,I really screwed up that meal big time.I never cooked for him again.I just make candy and pies for him on occasion.

Supreme Scalloped Potatoes
Very good!It went fast!My serving size was different for us as my husband eats for two.next time I will slice potatoes thin and just bake like directed.I want to try adding some cooked bacon to it next time.I used purple onion in mine as it was what I had on hand.I also used sharp cheddar cheese (my FAVORITE kind of cheese)I want to make this for my next family reunion and step back and watch it get devoured. My family inhaled it and my daughter is finicky.I will make again and again. This is one recipe I will keep and use as a favorite.I used store brand cheese and soup from our store called Save-A-Lot(which is right next door to us)and it turned out great.THANK YOU for this recipe,Erla Burkholder,I will look for more recipes from you
