Peanut Butter Pie 2000
this was soooo simple and sooo good! i used low fat stuff, and just a little bit more cream cheese and peanut butter (like a tablespoon each) and it was perfect!

Low-Fat Potato Soup
good, low fat recipe. it has the texture of a hearty soup, but you dont feel like you gained 5 pounds after eating it! I double the recipe, added a bag of corn and some carrots, and then used a total of 3 cans of broth (since i added more veggies) Let the soup sit for a bit and it thickens up really nicely! topped with cheddar cheese and green onions. oh, and add SALT!! it needs a bit of it.

Cindy's Pumpkin Pie
I am not a pumpkin pie fan, but this didnt have a strong pumpkin pie taste. so if you want a traditional taste, dont do this recipe! but if you want something a little different, definitely try it. i used a pumpkin spice and cinnamon for flavor, i think next time i will add more. i also used a graham cracker crust and will DEFINITLY NOT use this again and use a regular pie crust. i used french vanilla ice cream for it. turned out good, just melt the ice cream all the way in the microwave!
