Apple Bread
This bread is excellent. Like others, I replaced 1/2 of the sugar with brown. I think that really makes the bread. It's like eating candy, and I love the chunks of apples, versus other recipes that call for shredding. A definite keeper!!!

Ham and Cheese Breakfast Quiche
My kids loved this. Made a few minor changes: shredded my own potatoes, added minced, sauteed onions in with the egg mixture, added a little salt and pepper, used cheddar cheese and skim milk. I think this really could have used at least one, if not two, more eggs and double the cheese. Other reviewers commented on the potatoes coming out crispy around the edges. My son said that he would have liked even more crispy potatoes - all personal preference. Very good and very easy.

Tres Leches 'Three Milks'
My daughter made this for a school project. I'd never had it before. For the practice run, we followed the recipe to a T. At first I thought it was kind of weird, but then I became addicted and ate most of the cake myself. The second time around, my daughter used less of the liquid because she thought it was too much. I was really disappointed with the second cake. I loved all the liquid. At the school function, I asked two hispanic girls, who were testing the cake, if they liked it this way or more liquidy. They said it definitely needed more liquid. I agreed! I will definitely make this again for a Mexican themed get-together, but will probably not use the raw-egg topping.
