Crustless Spinach Quiche
This is excellent. I did make it a bit healthier by only using 1 egg and substituted egg whites to make up the difference of the remaining 4 eggs. Also used only 2 cups of cheese and added mushrooms. I will definitely make this again.

Blueberry Buckle
This was excellent as a coffeecake. I used the other suggestions and cut flour to 1 1/2 cups and used brown sugar instead of white for the topping. It is moist and delicious, I will be making this again.

Pumpkin Fudge
This turned out great. I was very nervous while making this as I did not have a candy thermometer but used the soft ball stage water test. I will now be purchasing a candy thermometer so it will make my life a little easier. I will definitely be making this again. They actually wanted $10.99/lb for this fudge at the store and this is just as good if not better!
