Cucumber Sandwiches II
I made these for a family reunion and everyone loved them. My mother-in-law has all ready requested I make them for the next get together. I used a seedless rye bread and really liked it. I am going to double the recipe and use both rye and white bread this time for added eye appeal. I am also going to add onions because our family loves them.

Potato Dumplings with Bacon and Onions
These were great. I chopped the bacon and onion in the food processor too. I fried cabbage with the bacon and onion and then added the dumplings. Just to experiment, I added shredded cheddar and wrapped little bits of the whole mixture in won ton wrappers and fried them. VERY time consuming but delicious.

Enchilada Sauce
I really liked this recipe. The whole family thought it was great! I used chicken/tomato boullion instead of chicken broth. I also left out the chocolate chips because I used too much cinnamon and thought it was sweet enough without them. Will use the chips on the next try. Loved it!!!
