Banana Blueberry Pie
I've made this pie for years and it's always great. I tweak it slightly by adding the juice of half a lemon to the cream cheese mixture and layering the sliced bananas on the bottom instead of mixing them in with the cream cheese mixture.

Bird Seed Energy Bars
These were fantastic, and a not too sweet way to start the day, or pre-work out with a cup of coffee or big bottle of water. I substituted dried cherries for the chocolate chips and added some pumpkin seeds as I didn't quite enough sesame seeds. I will definitely make these again.

Enchilada Casserole III
I sauteed a chopped onion and fresh minced garlic with the ground beef, and added a can of chopped green chiles. I also used canned enchilada sauce as did some of the other reviewers. I baked it in a glass covered corning ware dish for 45 minutes, and let it sit for 10 minutes before serving. It sliced beautifully and all the layers were visible. It was a nice and easy casserole for a week night supper
