Black Bean and Artichoke Burritos

I love this recipe! However I drop the garlic and the tomatoes and use a fajita seasoning on the artichokes and onions. I put salsa and cheese into the burritos and then put them on the george foreman grill!

Pie Crust IV

Use iced water to make a better pie crust! I also put it into the fridge for 30 mins after making it to make the pastry easier to work with.

Tim's Mac and Cheese

Great recipe. I don't put the bread or the butter on the top, I just broil it with cheese on top. Trying to keep the calories a bit lower! Sometimes its nice with a sprinkling of breadcrumbs on top with the cheese.

Pasta with Fresh Tomatoes and Corn

Great recipe, simple and flavourfull. I use balsamic vinegar rather than the red wine vinegar. I find it complements the tomatoes and basil more.

I use my george foreman grill to make these a little lower in fat. Also had to up the salsa a little bit more to taste. Awesome recipe!

Mexican Bean Burgers

Delicious, the recipe is fab! It's very easy to prepare. We all thouroughly enjoyed the burgers. I have plenty left over and have frozen them for later use! Much cheaper and has more flavour than the commercially avaliable veggie burgers. I think next time I will add more chilli powder as it wasn't spicey enough for our tastes!
