Zucchini Herb Casserole
This is great! I doubled the ingredients and used a 2qt dish. Everyone loved it and there is enough for lunch.

Zucchini with Chick Pea and Mushroom Stuffing
This was a great recipe. I stirred the parsley in at the end of the saute process. You could use this as a vegetarian meal!

Veggie Lasagna Florentine
This recipe was a great hit. Very tasty and very aromatic while cooking. I left out the brown sugar, and it was not missed. This is a “must try” recipe for anyone who loves great lasagna.
