Experimenting is one of my favorite things to do in the kitchen!! Inventing my own recipies and adding my own flare to ones I already know is what I enjoy doing. I don't like bland food so I am generous with the spices I use. I am a total spice freak! I like my food flavorful and I am addicted to SPICES!! I try to purchase a different/exotic spice everytime I go to the store because I can never have enough of all the wonderful flavors and aromas it can add to a meal. My boyfriend has loved just about every "creation" I have made.
My favorite things to cook
My best friend gave me her grandma's secret recipe for Indian Tacos. The flavor and texture of the fried bread is something I can never get enough of. This is one of my boyfriends favorite dishes that I make.
My favorite family cooking traditions
My family tradition is Adobo Chicken.
My cooking triumphs
First let me just say: Rules in the kitchen don't apply to me and neither does following recipes. I was asked to make cole slaw for my boyfriends parents St. Patty's day party. This would be my first attempt at ever making a slaw. I found the allrecipe for "Mom's Coleslaw" and tweeked it a little. I added a hint of dill and a little lemon juice. It was a HUGE hit! People were saying this was the best cole slaw ever!
My cooking tragedies
Now, because my slaw was such a hit at the St. Patty's day party I was asked to bring this again at Easter. I decided to make a healthy version of this dish so I used light mayo vs. regular. I also did not have any cider vinegar so I decided to use balsamic vinegar. What was I thinking?? This concauction was light brown in color and tasted like a cheap version of a salad dressing spread. I was horrified, I couldn't let down the guests who had already loved my slaw. I have a coleslaw reputation to keep! So I tried making a new batch, this time with light mayo and white vinegar. Gross! I ended up getting a small jar of regular mayo and made it again. Third time was a charm! The extra calories is so worth the flavor.
