Wasabi Mayo Salmon
Loved it. I have a hard time eating cooked salmon because of the smelliness factor, but the wasabi really helps. I couldn't find powder wasabi, so I used a tblsp of prepared paste. Next time I will use 2.

Stuffed Mushroom Caps
They were really good and my family enjoyed them. I used "jumbo" mushroom, but if I make this again I would use medium-large mushrooms because I found the caps stayed a little raw (which I didn't mind, but would have prefered if they were well done).

Pork and Green Chile Casserole
I felt like I was in authentic Mexican restaurant eating this dish. I loved it. I used chicken rather than pork, and I did not have instant brown rice so I parboiled the regular brown rice, drained it and added instead (that part was a bit annoying). We enjoyed the leftovers as well.
