Fudge Puddles

Reviewed: Mar. 22, 2009
I made these last night and they turned out perfectly. I'm only giving a 4 star rating as I have a better recipe (sorry). I do have a few hints however. Make sure you do as the recipe says and melt your chips in a double boiler. Milk chocolate chips just don't melt well in a microwave. ALSO - stir in the vanilla (to the fudge) LAST! Vanilla causes the fudge filling to harden up quickly. You must fill your little peanut butter cups quickly. I had no trouble as others removing my cups from the pans but in all fairness I have pretty nice non-stick muffin pans - you don't have to grease at all.

Fried Cabbage II

Reviewed: Jan. 29, 2009
This is a great recipe and I keep having a craving for it. It is very similar to my southern Mamaw's Wilted Lettuce. I did double the bacon. I used the cider vinegar the first time and balsamic the second and really couldn't tell much difference. Now I know everyone else omitted the sugar but I added about a Tablespoon as I like it sweet. Served it with barbecued polish sausage and we all loved it. Very good - thank you so much.

Chip Chicken Lollipops

Reviewed: Jan. 29, 2009
I'm sorry but this was totally tasteless even using barbecue chips. I had to slather on the ranch dressing just to get some sort of taste. This is the first thing in my fridge as far as leftovers that has actually gone to waste.

Honey Glazed Ham

Reviewed: Jan. 29, 2009
We really liked this recipe. If you make it, you might want to use powdered cloves as some have suggested. The only thing I found wrong was that it was impossible to find all the studded cloves and biting into them here and there was not pleasant. However, the ham was excellent - loved it.

A Good Easy Garlic Chicken

Reviewed: Jan. 29, 2009
First of all, I can't believe this is really a 5 star recipe as simple as it looks, but low and behold, it surely is!!!! I changed it just a bit as I had some leftovers I had to use up. I fried up about 6 strips of bacon, removed them, crumbled them and added a bit of butter to the grease. Combined the spices and rubbed them into the chicken and then fried in the butter/bacon grease. The "guy" wanted gravy so I just added a can of chicken broth and a bit of flour; then stirred in the crumbled bacon bits. Oh m'gosh - you MUST try this! Thank you SO much for an easy recipe. I've made this 3 times in 3 weeks as I keep having a "craving"!

Cherry Crunch

Reviewed: Jan. 29, 2009
I really, really liked this! I did take the advice of others and added about 1/2 teaspoon almond extract to the cherry pie filling and about 1/2 teaspoon nutmeg to the "crunch". It turned out perfectly. I was surprised that you could cut it into squares, rather than having to scoop it out. Next time I'd love to try peach pie filling.

Mom's Fried Fish

Reviewed: Oct. 17, 2008
I hate to do this as I'm really not an avid fish eater but my New Zealand friend is! I found these just so-so - not much taste and I think they needed way more seasoning. I had hoped they would be good the next day but they were a soggy disappointment. I tried again with a combo of flour and Panko and they were better but still needed more seasoning.

Microwave Bread and Butter Pickles

Reviewed: Oct. 17, 2008
OK - yum!!!!! But I do love bread and butter pickles! I followed this recipe to a T (didn't decrease the sugar at all). I'm a Southerner at heart and love the sweetness. They were quick and easy although I did try doubling and tripling which caused me to have to microwave them a bit longer. I tried making them with and without garlic and didn't notice a big difference but didn't add that much garlic. I also tried totally peeling the cukes as I felt the skins were a bit tough but they just didn't look the same. After filling the hot jars, I stuck them in a boiling water bath for about 10 minutes and they sealed immediately so I can enjoy throughout the winter. I used regular cukes (not English) and sweet Vidalia onions. IN fact, I may have added a bit more onion than called for. Next time I may add a bit of sweet red pepper for color. I gave some to my friend and she said her mom CRIED when she ate them as they reminded her of the pickles she helped her Mom make when she was a kid. That's a true testimony!

Cocktail Meatballs IV

These are ok for something quick but they seemed like they needed just a little bit of something extra - onions perhaps? Good in a pinch (kind of recipe to always have on hand). My 11 year old granddaughter loved them.

Sesame Pasta Chicken Salad

Reviewed: Oct. 17, 2008
Sorry but I can only give this 2 stars as I thought it was quite bland. It had a dark color to it which really didn't look attractive and just simply not much taste. Wondering if it had something to do with the low sodium soy sauce?

Melt - In - Your - Mouth Shortbread

Reviewed: Aug. 10, 2008
Tried this yesterday and...I'm still looking for that perfect shortbread for my kiwi friend. I beat the heck out of the butter and the batter. Added 1 tsp. vanilla and cooked at 350 for 13 minutes. Some I sprinkled chocolate shot on top and some I topped with Heath bits. They were ok but still tasted pretty floury to me. I think I'll switch up next time - using less flour and more powdered sugar.

Sweet Restaurant Slaw

Reviewed: Aug. 3, 2008
We LOVED this slaw! I had tried the recipe off the Secret Recipes site and this one is much better, although I'll add just a tad bit more onion. Extremely easy to throw together and had everything on hand, except the poppy seed (used celery seed instead). Thanks!

Ignacio's Super Peanut Butter and Jelly Sandwich

Reviewed: Jul. 18, 2008
Oh m'gosh, I can't believe I'm rating a PB&J sandwich. Came across this by mistake and was hungry for it at the time. Thought to myself, "how different could this be"? Well, it really messes with your senses which makes it oh, so fun! The plain bread and toast combo just have your mouth asking for more. Used chunky Jif and Cherry preserves - yummy. I've told many people at work about this recipe and they just look at me like I'm nuts. You must try it. The grandkids think it's awesome as well!

Chicken Cordon Bleu II

Reviewed: Jul. 18, 2008
I liked this recipe quite a bit. The key is to definitely double the sauce or there won't be enough and without the sauce, it really isn't much. I wish I would have used a thinner slice of ham as it turned out rather chewy and at first, I thought the chicken wasn't done. I ended up tying the chicken AND using toothpicks; dipped in egg and breaded in Panko as others had suggested. Fried a bit in the skillet until brown and popped into the oven (made the sauce on the stove) The problem was finding the darned strings under the Panko and when I tried to pull them off, the breading came off with it. Really a good recipe for something a bit different. Thanks!

Peach Cobbler VI

Reviewed: Jul. 18, 2008
Sorry, really didn't like the texture of this one. I'm from the South and prefer the more cake like/even a bit crunchier texture - more like a cross between cobbler and crisp. This was very "puddingy" - The peaches self-destructed and it was just kind of gooey. I added a couple Tbsp. of sugar on top for a hopeful crunch but it didn't happen. Sorry.

Caramel Brownies II

Reviewed: Jul. 12, 2008
I'm only giving this 4 stars because my recipe differs just a tiny bit. Try using two cups of semi-sweet chocolate chips rather than just one. They turn out gooier and delish! Gone in 5 minutes at any potluck.

Ham, Potato and Broccoli Casserole

Reviewed: Jul. 12, 2008
I was looking for a recipe for "Musko night" (everything "must go"). Had 2 half bags of frozen french fries, half a bag of broccoli and leftover ham so thought this would be right up our alley. It was really better than I expected but I think if I made it again, I would substitute grated cheddar cheese for the parmesan. Easy and quick for leftovers.

Amazing Italian Lemon Butter Chicken

Reviewed: Jul. 12, 2008
I am so sorry but my gosh - this was awful! Even though I read the other reviews about the butter separating, I though - hey, I can do this? Well, I was wrong! It looked good as long as I was cooking it, but low and behold, as soon as I poured it over the pasta, it separated and was a buttery mess - yuck! Between the overly lemon flavor and the pasta literally swimming in butter and oil, it was a disaster, to say the least. I MUST start believing everyone's reviews! My guests looked at me like I was crazy and the leftovers were promptly thrown in the garbage. Sorry - but will never make again!

Speedy Ice Cream

Reviewed: Jul. 12, 2008
I was quite excited to try this recipe as I lost my Ice Cream Maker in the move? First of all, DON'T DOUBLE this! It will never set up and is incredibly cold - even through my oven mitts. Tried it again (adding Oreo crumbs as someone had suggested). Put it in the freezer for 5 hours and it still was like a "runny Dairy Queen Blizzard", not even soft serve texture. Taste was good but I like my ice cream a bit firmer. I will say this was fun for my grandkids. NOTE: Don't forget to run the inner bag under COLD water to get the salt off or you'll have salty ice cream once you "squish" it out.

Grandma's Crispy Pork Wontons

Reviewed: Jul. 12, 2008
These were pretty good but I have a couple of suggestions. First of all, I used pork sausage (in a roll). Secondly, I added some Chinese cabbage to the veggie mixture and sauteed them just a few minutes. Lastly, I would recommend NOT using a deep fryer. They seemed to IMMEDIATELY rise to the top. Some were willing to "turn over" but some were not so I had to leave the cover open and hold them down. Served with Teryaki veggies and dipped them in sweet and sour sauce (boyfriend used sweet chili sauce). Overall, not bad but needs a bit more flavor - garlic perhaps?
