Breaded Chicken Fingers

Easy and yummy! Did as others suggested and double dipped for extra crunchiness. Used a deep fryer but will try baking next time. Delish! Served with Honey Mustard II sauce from this site--great dinner!

Honey Mustard Dressing II

I've never been a fan of mustard but recently was adventurous and tried some honey mustard at a restaurant. I liked it so much and came home and found this recipe. I made it with Breaded Chicken Fingers from this site and LOVED IT!

Microwave Caramel Popcorn

Delicious and Easy!!!! Used real butter and only used one bag microwave popcorn and cut caramel recipe in half. It did burn a wee bit, and I'd already cut the last two end cooking times down to 1 minute, so will try cutting the last one down a bit more.

Yummy--me, my husband, and 2 year old all loved it! So easy, important to really slice the meat thinly. Also did as others suggested----cooked veggies first, set aside, then meat, set aside, then sauce including 1T cornstarch mixed with some water and added everything back to pan to heat and coat.

Quick Cheeseburger Pie

Yummy Filling! I added 1/2 cup ketchup, used sweet pickle juice and 1/2 cup of sweet relish instead of chopped dill pickles. Also used American cheese but will try cheddar next time. Wasn't crazy about the crust--will try ideas suggested in other reviews--perhaps the pizza dough will help make it healthier. :o)

Broiled Tilapia Parmesan

I am not a big fish fan, but this was delicious! I cleaned my plate very quickly. I used garlic powder instead of celery salt and sprinkled fish with Old Bay (as others suggested). Also, I added breadcrumbs as others suggested but maybe too many as there wasn't really a "sauce" more like a coating on the fish--but YUMMY!

Ten Minute Enchilada Sauce

The store was out of enchilada sauce so I found this recipe. I don't used the canned stuff enough to compare, but this had a real good flavor. Used Wondra and cut water to 1 cup as others suggested. Used 2T of chili powder but then added an additional 1 as it needed a bit more flavor. Super easy to make!

Rhubarb Bread I

I'm sorry, but this bread just had no flavor. I used fat free sour cream and 1 cup whole wheat flour in place of 1 cup of all purpose as others had suggested. It was very moist but just no flavor. I left off the topping--didn't want the extra sugar, but maybe that's where all the flavor was.

Irish Soda Bread

Had sworn off making Irish soda bread as it always came out dry and flavorless. But, saw this recipe--straight from Ireland and boy I'm glad I did--Delicious!!! My husband thought he didn't like Irish soda bread until he tried this and he ate several pieces. Skipped the flour on top and the caraway seeds (don't care for) and only had 1 1/2 cups of raisins in the house. Couldn't be better.

Corned Beef and Cabbage II

I'd said I wasn't making corned beef and cabbage anymore because it always came out blah, but read all these reviews and gave it a try. Used a flat cut corned beef, so it was very lean and used apple juice for the water. Also, cooked at 250. Very moist and so much more flavorful than the boiled stuff!! My 21 month old couldn't get enough of the meat! Now we'll be having a good old Irish meal on every St. Pat's!

Artichoke Chicken

Yummy! Just like the dip but now its a meal! Did as someone suggested and cut chicken up, mixed it all together and served over pasta. This way only had to use 2 chicken breasts. Delish!

Banana Crumb Muffins

Yummy and moist. Maybe the person who said they were dry overcooked them, because they weren't dry at all! Made them heart shaped for Valentine's Day. Ran out of topping and even the ones without it were good and moist. Did use oil vs. melted butter and added vanilla.

Diana's Hawaiian Bread Rolls

Have never made rolls with my bread machine before and WOW, these were a great first try! The dough came out Perfect! Light, fluffy, not sticky. Super Easy to make. I used 2T honey and no molasses as others suggested, may try less lemon next time. The last time I had Hawaiian bread was my honeymoon 4 1/2 years ago, and while these don't taste exactly like a remember (I seem to recall it being just a bit sweeter) these were absolutely delicious. Serving with Kalua pig in the slow cooker from this site tonight with dinner. YUMMY! I'd say well worth the effort, but there's really so little effort involved!

Quick and Easy Ham with Sweet Potatoes

Super easy! and good! Used fresh sweet potatoes I microwaved and cut into thick slices (don't care for canned). Left sweet potatoes off of husband's as he doesn't like, and marshmallows off of 15 month old's as she doesn't need them, and every one loved their own little packets!
