Mexican Potato Stew
This was ok and edible, but I probably won't make again. I did change the recipe a little. I added onions in with the ground meat and cooked them together. I also added shredded cheese on the top of the potatoes the last 5 minutes of the cooking time.

Spinach Brownies
I followed the other reviewers suggestions. I 1/2ed the butter, added garlic, mushrooms, and tomatoes. That part was good but the flour just ruined it for me. I couldn't get over the texture. It was like egg gone wrong. I think it would be better with more eggs and no flour. I didn't care for it and neither did anyone at the office.

Spinach Quiche
Great Recipe: I used cheddar cheese instead of Feta because I just don't like Feta. I also added a can of drained Rotel tomatoes. It gave it just a little spice. I loved this. Thanks for sharing! :)
