Broccoli Cheese Soup

I wish I had followed the directions... I doubled the cheese as many suggested, and it was really salty and had a strong processed cheese flavor. I'm glad I doubled the broccoli, but next time I will use only 1lb. of the cheese.

Sweet Restaurant Slaw

Very easy, impressive recipe. SO much better than bottled slaw dressing, and less expensive too... my standard from now on. I did cut the sugar a bit.

Chicken Garlic Pizza

This pizza was delightful. With my changes, I thought it was amazing. In a pinch, refrigerated dough is fabulous. I wouldn't put it on a recipe, though... it is much better with homemade crust. Instead of boiling the chicken, I sprinkled it with garlic salt and cooked it in a little bit of oil in a pan on the stove. This browned it and gave it a nice color and flavor that would have been missing otherwise. I used homegrown tomatoes that were very juicy... I think this helped the pizza not be too dry, although doubling the sauce would do the trick, too... I used fresh basil in the herb butter and it was amazing. I also subbed fresh mozzarella for the ricotta. I added some greens to the top before baking. We had swiss chard, so that's what I threw on there but any green would work. YUMMO! Thanks for the inventive pizza idea.

Goat Cheese and Arugula over Penne

I made some changes: added pine nuts sauteed garlic in olive oil first, then added arugula until wilted and coated, before adding to the rest of ingredients. We really enjoyed it. Very tasty, and easy.

Easy Arugula Salad

Very tasty. I used candied walnuts in place of pine nuts, and added dried cranberries, but otherwise followed the recipe. I liked the rice vinegrette, it had a delicious flavor with the strong arugula.

Beth's Spicy Oatmeal Raisin Cookies

I used all butter, and used 1/4tsp cloves and 1/4 tsp allspice. I also used whole wheat flour for all of the flour. They were delicious. The best oatmeal raisin cookies I've ever had.

Creamed Hard Boiled Eggs

We called this our "country meal", it had that flavor. I added minced onion, cooked crumbled bacon, and peas. We also subbed yogurt cheese for the parm. It was pretty good, but I probably won't make it again.

Pork Fried Rice

This was pretty good. I used leftover pork tenderloin and rice from last night. I used a little more veggies and meat than called for. Also, like another reviewer suggested, I left the meat/veggies in when I added the rice and sauce, pushed it aside when warm, and scrambled the egg before mixing it all together.

Baked French Fries I

These were excellent. I added salt (what are french fries without salt??), cut them thin with my crinkle cutter and cut down temp to 425 and time to about 25 min. I've tried baked french fries many times but these turned out the best, by far.

Banana Crumb Muffins

As if this recipe needs another 5 star review. But here it is. My only issue was the topping, I put it on about halfway through the baking, and it just didn't look right, but I think I didn't get the butter fine enough to make real crumbs. My issue. Thanks for a great muffin!

Ranch Dressing II

Used as is for dip, was fantastic (changes: cut mayo in 1/2, didn't have any chives, put in an extra shake of garlic). Will thin with buttermilk for salad dressing tomorrow. Can't wait!

Jay's Signature Pizza Crust

Very good. I did make some changes, and it was still very good. I used a bread machine, mixing the water, brown sugar, salt, and oil in the bottom first, and then putting flour and yeast on top. I also used 1 cup of whole wheat flour, and 2 1/3 cups of white flour. It made for a very filling nice thick crust with a little bit of crunch but very soft on the inside!

Buttery Spritz Cookies

The best Spritz cookie recipe I've made (okay, I've only used 2) :) But this was much easier to work with and tasted better too. I used an egg substitute (1t baking powder, 1T vinegar, 1T water) because I was baking for a friend who has a son allergic to eggs. It STILL turned out fantastic. Thanks!

Asparagus and Mushroom Puff Pastry Pie

Yummy! And very elegant! As suggested, I used the whole pkg of hollandaise. I also used the full amount of asparagus. A few tips: 1)Use an egg slicer to slice the mushrooms. They slice easily and are uniform that way. And 2)My puff pastry sheets were square, not long enough to cover my pan, so for the top layer, I cut into 9 strips and layed them criss-cross in a lattice design on top. It turned out great, thanks!

Spinach and Rice (Spanakorizo)

Yummy! I did make some changes: I used a one lb bag of frozen chopped spinach, a bag of frozen precooked brown rice from TJ's, a 15oz can of tomato sauce, and only 1/4 cup of water (because the rice was already cooked). It complemented our "marinated chicken pitas" from this site very well! Thanks for the recipe.

Marinated Chicken Pita Sandwich
