Radish Dip

Used apprx 8 radishes from my garden, light cream cheese (only 8 oz) and minced garlic. What a refreshingly-light and tasty dip! I served it with butter crackers and dirty martinis per the 'What to Drink' suggestion. Yummy!

Delicious Artichokes

Beware: If your artichokes are large, allow much longer for the steaming. My jumbo artichokes steamed for 1 1/4 hrs before they were even close to done. This wreaked havoc with coordinating an entire meal getting done at the same time.

Asian Rainbow Trout

This is really good. I followed the suggestions of other reviewers and substituted sesame oil and brown sugar for the olive oil and white sugar. I also baked the 1 lb. whole trout in foil in the oven at 350 degrees for 25 mins. It was perfect. I plan to make this often.

Baked Shells in Sauce

Venison Fajitas

I did lots of things wrong, and this still turned out to be a very yummy dish. I used cubed venison stew meat instead of beef strips. I also put all of the seasoning on the meat to marinade instead of saving some for the veggies. Even so, we couldn't stop eating this until it was completely gone!

Queso Catfish

I had the same issue as another reviewer...my fillets were thick and needed about 5-6 mins longer in the oven. I only had real cheddar cheese, so I added a little milk, salsa and a small spoon of sour cream to a handful of cheddar cheese cubes instead of the chipotle and processed cheese spread. Otherwise, everything else was the same, and the dish was very good.

Coconut Curry Tofu

This is one of my favorite recipes on the website. I'm a carnivore, but this kind of dish could make me a vegetarian. I utilized the helpful hints of other reviewers (drained and seared tofu). We couldn't stop eating this great dish.

Absolute Best Liver and Onions

Since my BF is a hunter, I make venison liver and onions fairly often from an old, standard type of recipe. This time, I bathed the liver in fat-free milk for appx 6 hours. What a difference! The texture was consistently wonderful from piece to piece, and the taste was fabulous. We couldn't stop eating the liver and onions. Thanks so much for a great recipe!

Baked Spaghetti Squash with Beef and Veggies

Per suggestions by other reviewers, I cooked the squash in the microwave and substituted Italian Seasonings for the various spices. I used ground venison instead of beef, and added some fresh mushrooms I had on hand. Delicious and healthy!

Yep. Looks icky in the end, and still tastes really good. I took pts from other reviewers...cut back on OO, added garlic powder, cut back on dill a bit. I like the fact that it is low-cal, and healthy.

Deer Chop Hurry

I used antelope chops, did not brown the meat first as other reviewers indicated it wasn't necessary, and added some fresh mushrooms. It turned into a ragu-type of dish, so I served it over garlic mashed potatoes. Talk about easy and delicious!

Buttery Lemon Spinach

I microwaved on high for 3 mins to get it perfectly between too under-done and too wilted. Used 1/2 olive oil and 1/2 butter. I also listened to another reviewer and added some red pepper flakes. It was great, and I will make it again.
