Delicious Ham and Potato Soup
I take the time to rate only the very few recipes that are so outstanding that I can't stop thinking about them. I love to make soup and this is by far the BEST soup that I have ever made. My children 9, 7 and 3 licked their bowls clean. What a heavenly pot of goodness! My only comment is that I like my soup thick and found that I needed to add more flour mixture and I may add more veggies next time to make it even more hearty-but thats easily done with a recipe like this. I am already craving another pot and the best thing.... - its CHEAP and easy!!!

Fourth of July Potato Salad
I searched for years to find a recipe that was like the potato salad from my favorite deli in NY. Wow this is as close as it gets. I marinated the onions in the vinegar mixture while the potatoes cooked-I like what it did for the flavor. I also mixed in the dry mustard with the sour cream/mayo mixture. My potatoes marinated for 4 hours instead of 3o minutes but still came out WONDERFUL! So creamy with just the right tangy flavor-reminiscent of a great deli!! Oh - I omitted the eggs-doesn't need it.

Au Gratin Potatoes
I used a can of cream of potato, a can of cream of chicken, a splash of milk, about a cup of sharp cheddar and the shredded type of hashbrowns. As recommended, I sauted an onion - but ommitted the pepper.I baked with my ham for an hour at 300. Then I toppped with french fried onions and baked an addition 15-20 minutes. They were unbeleivable! A new staple in our house! So perfect with ham!
